From personal experience, safer to do minimum of 6 400watts if space isnt a problem to get a higher PV voltage. U get a longer duration of use/day compared to 4 550w. Ur inverter wont start working until it sees minimum 120v from the sun.

When I want to on the fridge I off everything. It doesn't pick the fridge, it only picks the light inside the fridge if I open the fridge door.

First, make sure that your inverter is pure sine wave, because MSW inverters doesn't work well with inductive load(compressor).

Second, check the surge of the fridge if your inverter is enough for it.
