This goes really well with grilled plantain.

Ingredients:

A bag of gizzard
Vegetable oil
1 red bell pepper
6 Roma tomatoes
5 Habenero pepper (rodo) ( or desired amount)
One large red onion
2 Maggi cubes
seasoned salt
Curry
Thyme
Bay leaf

1. De-ice the gizzard then season with seasoned salt, Maggi cube, bay leaf and drop one habenero pepper. Cook until tender.

2. Blend the tomatoes, onion, bell pepper, Habenero and Maggi together.

3. Now you could either fry the gizzard or bake them in the oven till they are a nice brown colour.

4. In a separate pan heat the vegetable oil on medium heat, drop a slice of onion for the sizzle test, wait until the onion turns brown then add your blended mixture.

5. Add a bit salt, curry and thyme. And bay leaf.

6. Cook for 40 minutes on medium heat, do not stir to avoid splash, do not cover either or it will take longer to fry.

7. Add your gizzards and allow it to marinate for 10 additional minutes.

6. Add your sliced onions and green pepper for 3 minutes only…do not over cook or the peppers turn brown…Remember the green pepper and onions doubles as a garnishment.

Enjoy.

What would a naija Barbq be without a few grilled plantains (Boli)?

I know I don't need to explain this one

oh ,  and  for barbq's where people will probably be moving around, ts much easier to grill the plantain ready on a skewer.

This dish is for the memorable moments in life, and it’s best shared with a table full of friends and family.

And it absolutely couldn’t be simpler: you throw a bunch of shrimp in a baking pan and douse it with a heavenly mixture of olive oil, lemon juice, Worcestershire, Tabasco, salt, pepper, and butter.
Then you broil it to perfection and serve on a table covered with newspapers, because it’s super messy.

Everyone just digs from the pan and for some reason this always elicits lots of laughs and good times.

Ingredients

* 1 tablespoon ground cumin
* 1/2 teaspoon ground ginger
* 2 1/4 teaspoons active dry yeast (one package)
* 2 teaspoons brown sugar
* 1 1/2 cups warm water
* 3 cups all-purpose flour
* 1 cup cake flour
* 1 teaspoon salt
* 1/4 cup unsalted butter or spiced ghee
* 1 egg, whisked, for egg wash

Directions

* Combine the cumin and ginger in a small saute pan and toast over low heat until fragrant, about two minutes. Set aside to cool.
* Combine the yeast, brown sugar and warm water in a small bowl, stirring to mix. Let sit until the yeast begins to bubble, 5-10 minutes.
* Combine the flours, toasted spices and salt in the bowl of a stand mixer. Pour in the yeast mixture and mix on low speed with the paddle attachment until well-combined. With the mixer running, pour in the butter and mix until well-incorporated.
Switch to the dough hook and knead the dough until smooth and elastic, about seven minutes.
* Transfer the dough to an oiled bowl and turn to coat. Cover with a damp cloth or oiled plastic wrap and let rise in a warm, draft-free spot for 30-45 minutes, until almost doubled in size.
* Punch down the dough and cut it in half. Shape each half into a ball. Spray a baking sheet with cooking spray or grease it. Place the dough on the baking sheet, cover with a damp cloth or oiled plastic wrap, and let sit in a warm place for another 30 minutes.
* Preheat the oven to 350 degrees.
Brush the tops of the loaves with the egg wash.
Bake for 30 to 35 minutes, until the loaves are golden brown and sound hollow when tapped.

3 teaspoons finely ground roasted peanuts
2 teaspoon cayenne pepper or red pepper, or red pepper flakes
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon ground ginger ½ teaspoon garlic powder
1/2 teaspoon onion powder
1 or 2 pounds of meat (beef, chicken, etc.), cut into bite-size pieces
1 onion peeled and cut into chunks
1 tomato cut into chunks
1 green or red bell pepper, cleaned and cut into chunks (optional)
• Make the ground peanut powder: Remove shells and skins from roasted peanuts, if necessary.
• Grind the peanuts into a fine powder (briefly pound them in a mortar and pestle; crush them with a rolling pin; or use a food processor).
• Be careful not to grind them into a paste. If the peanut powder is oily, wrap it in absorbent paper (paper towel) and squeeze for a minute or two.
• Stir the spices into the powder, mixing well.
• For really spicy hot suya, use more cayenne pepper; for a milder dish, substitute paprika for some (or all) of the cayenne pepper.
• Divide the peanut-spice mix into two parts, putting half in one bowl and half in another.
• Set one bowl aside.
• Dip and roll the meat in the other bowl of the peanut-spice mix, making sure the meat is completely coated.
• Allow meat to marinate for thirty minutes or more. (Get the outdoor grill going or preheat the oven while you are waiting.)
• Place the meat on skewers (alternating with the onion, tomato and sweet pepper, if desired).
• Broil in a hot oven, or grill over hot coals, until meat is done.

In the spirit of sagamite's proposal to have n NL Summer Barbq in London,

I reckon a few barbq recipes will not be amiss.

Grilled Salmon

A simple soy sauce and brown sugar marinade, with hints of lemon and garlic, are the perfect salty-sweet complement to rich salmon fillets.

Ingredients:
1 1/2 pounds salmon fillets
lemon pepper to taste
garlic powder to taste
salt to taste

1/3 cup soy sauce
1/3 cup brown sugar
1/3 cup water
1/4 cup vegetable oil

Directions:
1. Season salmon fillets with lemon pepper, garlic powder, and salt.
2. In a small bowl, stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours.
3. Preheat grill for medium heat.
4. Lightly oil grill grate. Place salmon on the preheated grill, and discard marinade. Cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.

Food / Wagyu Steak by AmakaOne(f): 3:14pm On May 18, 2009
Some say that this steak is a gourmet treat.
The Wagyu are cattle that produces beef products that have less fat marbled throughout.
This beef is a very tender and scrumptious type of beef.

Recipes with Wagyu steak are just like recipes for any type of steak, you just don’t have to worry as much about producing a tough and rubbery steak.

You can try this recipe that is especially for Wagyu steak.

You will need:

  1. 5 pounds of Wagyu steak,
  2. 2 tablespoons of vegetable oil, olive oil, or canola oil,
  3. 1 green pepper,
  4. 3 stalks of celery,
  5. peppercorns,
  6. mushrooms sliced thinly,
  7. 4 green onions,
  8. ½ teaspoon of tarragon,
  9. salt and pepper.

First, preheat your oven to 350 degrees. Heat a small amount of oil in a skillet and then season your Wagyu steak with salt and pepper. Place the steak in the skillet and brown both sides, this is to keep the juices inside of the steak and will help keep it tender.

Remove the steak and add the onion, green pepper and celery and lightly brown. Place all the above items in a shallow baking dish and add the peppercorns and cover your baking dish and allow to simmer for 3 hours. After the three hours, you can add the green onions and tarragon. Cook until the green onions are tender, and then add the mushrooms on top of the steaks and cook for another 30 minutes.

You can also use any recipes for steak for your recipes for Wagyu steak.

Food / Re: So What Do You Usually Do With Dough That Doesn't Rise by AmakaOne(f): 9:06am On May 18, 2009
nikinash:

You probably have tried making bread or something that requires the dough to rise at some time or the other, but it doesn't so what do you do with the dough, throw out or turn into something else? Please culinary gurus like amaka, epi, canyon etc this is for you.

Cool air or old yeast will keep your dough from rising properly. If a bit of heat doesn't revive the yeast, you can mix a little more yeast into the dough.

#Create a warmer place for the dough: Fill a large pan with boiling water and place it in the oven on the lowest rack, or heat a mug of water for 2 minutes in a microwave.

#Place the dough (in its bowl) in the oven or microwave along with the hot water. Leave it to rise.

#If the dough still doesn't rise, add more yeast. Mix yeast from a new package with 1/4 cup (2 fl oz/60 ml) warm water and 1/2 tsp. sugar. Let it sit for 10 minutes until foam forms, to be sure the yeast is active.

#Knead the yeast mixture into the dough.

#Leave the dough in a warm place to rise.

Food / Re: How To Make Party Style Fried Rice by AmakaOne(f): 5:36pm On May 15, 2009
Jollof or Fried Rice?

Fried Rice
INGREDIENTS:
3 Measuring cups of rice
Salt
Curry
Thyme
1 Tsp Turmeric
Maggie Chicken or Goya
2 Cooking spoon of mixed vegetable
2 Cooking spoon of butter
Large shrimps (the more the wealthier it looks & tastes)
Crabmeat (quantity is left to you)
Chicken broth

DIRECTIONS:
1. Bring out the mixed veg and let it defrost for a while.
2. Clean the rice.
3. Add the teaspoon of turmeric, the chicken broth (add enough to taste but not too much so it wouldn’t be too salty), and add a little water to the raw rice then boil everything together.
4. Once the rice is soft but NOT mushy set it aside.
5. Get a new big pot, put the butter in it and let it heat up.
6. When the butter is hot add the mixed veg first because they take a little longer to cook.
7. The mixed veg is cooked when the green beans is soft.
8. Next add the crab meat and the shrimps and mix them together.
9. Add the curry, thyme, Maggie cube to the mix that is heating up and stir it.
10. When you feel the blend is fried but not burnt add the boiled rice one spoon at a time.
11. With each spoon of rice you add make sure you stir everything together so the rice is stirred in with the fried mixture.
12. After all the rice has been stirred in completely then the fried rice is ready to be served.

For best results, serve with roast chicken. Enjoy!

@ Amakaone

Fair enough, you are entitled to your own opinion. But just pray you dont find yourself in that situation. The first thing you ask youself is what is better? Getting your husbands' love and gratitude forever for your patience and kindness and creating a bad blood between you and your in-laws and of course, your husband. Me, as far as she dosent expect to sleep on the same bed with me and my husband, I'm willing to take the chances.

Thanks.

I pray that I don't ever find myself in that situation.  Dealing with the outlaws can be totally taxing on it's own it seems.

As far as the highlighted part goes, if my husband to be really feels that way then I guess we were not compatible to start with and have  no business getting married.

Anyway got ta go, going to my own b'day party.

Family / Re: Living With MiL by AmakaOne(f): 4:50pm On May 15, 2009
A ujujoan, I think our perspectives on marriage are different. Mind you I did not say that she should never move in with them. and I think for the reasons you stated she very well could, I just question the timing ofthe whole thing.

These people are just getting started in their married life  and the husband to be is clearly not comfortable with having his mother in law in his house from day 1 of his marriage.

The man is marrying the girl and I believe he really has every right to want his wife to himself for a while. No MIL. BiL,SiL etc from both sides living with them.

As I said b4, surely the other siblings could take care of the mom or some other arrangement be made while the couple settle down as a couple?

When they have settled and they are comfortable living with each other as a couple and have resolved the miriad  problems that come with being newlywed on their own then surely she can move in.

As I said, I'm not married, but I  have personally seen  and read here on NL just how taxing those first few months of marriage are.

I still believe that marriage more than any other relationship in this world requires work on the part of both parties and more so at the beginning of the marriage.

Just scroll down on this forum and see the number of newlyweds with millions of varied issues that they are dealing with.

There is aboslutely nothing wrong with her coming to visit or them visiting her. That surely will take care of the loneliness.
She does not need to be with them 24/7. Even spending the weekned. The issue to me seems to be that she is moving into her daughters marital home permanetly just as her daughter is going there as a new wife.

Even in the village where I come from that is not done. A newlywed couple's space is considered sacrosanct , and I want to believe that our elders knew a thing or two about human relationships.

Is it wise really, given other possible alternatives to go through all that with another person who is not intimately involved in te relationship as witness to that?

Starting married life with your mother in law in your house is not the best scenario in my opinion.

Family / Re: Living With MiL by AmakaOne(f): 1:23pm On May 15, 2009
Ujujoan:

Sweetie, I understand your point of view. You have a right to believe in whatever you want to believe. And so does the poster’s wife. As far as I’m concerned there’s no harm in one’s MIL living with them. And yes, I call him selfish because if he’s wife wants her mother to live with them, him assuming she will cause problems in the house and using that as a grounds to say no is not right. I mean I can understand excuses like limited funds, no extra room and all that, but breaking their marriage? That’s taking it a bit too far.

I might not have the experience of a ten-year marriage, but I know nobody can spoil my marriage unless I or my husband gives him/her the permission to do that. Relative or no relative. Living with us or not living with us.

And I’m not just looking at my case from my own point of view. Maybe you dint understand what I said earlier. My granny was evil. Infact she gave my mum hell when she came into the family. My mum had 6 girls first before she had a boy so you can imagine the battle it must have been in those days. But did that make my mum turn her back on her when she needed help? No! Did she change? No! If anything, she got worse in old age. But no matter how hard she tried, she couldn’t come b/w my parents.

All I’m saying is that, if my MIL has no other option, or truly wants to live with me, why would I deny her that? Except I see she has undue influence over my husband. And I can’t conclude that based on assumption. That’s taking the easy way out.

I'm not married myself, but I think you may feel this confident because you have had time to build a strong relationship with your husband since you got married. MHO

You know what works and does not work between you and him and you know what the dealbreakers are.
The OP said that this MiL issue is a condition hi s fiancee has set before they are actually maried.
in that light do you still think it is wise to let a third party into the home?

Ujujoan:

And yes, I call him selfish because if he’s wife wants her mother to live with them, him assuming she will cause problems in the house and using that as a grounds to say no is not right. I mean I can understand excuses like limited funds, no extra room and all that, but breaking their marriage? That’s taking it a bit too far.

Is he truly selfish in wanting time time to build a strong  husband/ wife relationship with her before her mom moves in?

Think back to the time when you got married if you are. Were you able to predict what the state of your finances was going to be REALLY like after your marriage?

Were you in a position to look for a home that would not just accomodate you and your new husband, but a third party (an adult to whit) which would provide all of you with the necessary space and privacy?

Surely newlyweds deserve the time and space to explore and get to know each other in the privacy of their home before family members start moving in lock stock and barrel?

Ujujoan:

Except I see she has undue influence over my husband

And how is he to really discern what sort of influence his MiL has over her now MARRIED daughter if she moves into their home from the word go?

I truly think that both mother and daughter are being extremely selfish.

If the wife has siblings let her mom go and stay with them for a while and let the newlyweds establish themselves first, spiritually, emotionally, finacially, socially and otherwise as a couple.

Then and only then can the issue of bringing 3rd parties into the marital home can be entertained.

In this situation, I think the mom and daughter are the ones being extremely selfish.
You said yourself that your mom had already born 6 kids b4 your granny moved in.

Allow the guy to be a husband to his wife and a father to his kids before family starts moving in abeg.

Even in the village newlyweds get their own house even if it's just mud and wattle in the family compound. MiL does not go with her daughter to her marital home.

Just my thots sha. Like I said, I'm not married myself so all this is purely hypothetical.
