I am more than happy to help.

So for ingredients, I used the following.

Indiagate Basmati rice - 4.5 tea cups
Tomato paste - half of half derica
Chopped tin tomatoes - 3/4 of half derica
Onions - One Big Bulb
Groundout oil - use your church mind
Salt - use your church mind too
Coconut milk - one tin as posted earlier
Knoor seasoning - 3 wraps
Hot Indian curry - add tangible amount.
White pepper - use your church mind
Water or Chicken stock - use your church mind
Bay leaves - 2 broad leaves
Hot Chili pepper - ur church mind is needed here too.
Blended dry shrimp - just sprinkle
Mackerel - optional
Capsicum - green, orange and red.




Directions.

Wash your rice with cold and hot water to get some of the starch off.

On cooker, put your pot on top so it dries off any water.

Add your groundout oil.

Don't let the g-oil heat to a point you begin to see smoke, then add your salt, then onion. Stir for about 30 seconds.

Put your tin tomato paste. Stir for a bit, then add your chopped tin tomatoes.

Cover and let it simmer for a bit, then open the pot and start stirring to you start noticing that is like the stew want to burn cheesy

Then add all your maggie, pepper, curry, white pepper, shrimp, bayleave and coconut milk and other medeh medeh, including mackerel if you are avoiding chicken like me.

There is no need to mix in water, just pour it like that. Rinse the tin, pour the water into your pot and stir.

By now, you should notice that your pot has this whitish-stewy look. So you stir.

Then add water/stock that you know will cook your rice once.

When the stock boils, add your rice.

Then stir with spatula properly so that the ingredients mix well.

When it looks like water is about to dry up, add your capsicum - I use orange, green and red pepper. Half of each.

If it looks like the rice is not cooking uniformly, get a sheet of foil and use it to cover the rice before using the main cover. If it is burning under and water has dried to a reasonable extent, still leave the foil, but put off your cooker.

The heat will cook up the remaining.

Dish it out while it is hot. Then store in your fridge, or your tummy, as you wish smiley

I have discovered two things that takes my jollof rice to another level of existence.

I use India gate basmati.rice, it has this brown packaging and the bottom is transparent. I had actually bought it just to try it out, and I am so glad I did.

The longer Basmati rice is in storage, the better it gets. It cooks faster than Thai parboiled rice as well.

Also, I don't parboil it before cooking. But I make sure to wash well with hot water.

Okay back to my reason for posting.

I discovered that canned coconut milk makes all the difference to my rice, and maybe a bit of white pepper, and a sizable amount of Indian hot curry.

Despite not using chicken stock because I have been avoiding chicken lately, I find that just using mackerel alone ( not geisha though), still gives me that superb party jollof taste, and I have to hold myself back from binging.

I am quite lazy at snapping pictures, but if anyone wishes to know my recipe, then I am more than happy to get off this lazy butt and go take pictures of my finished product and then write out the directions.

Meanwhile, here's a picture of the canned coconut milk i took from earlier.

I remember the first day I saw Beans to buy here.

I was dancing in my house and making funny faces. I was soooo happy that I found beans.

I finished cooking the beans that night and couldn't eat it because I was overjoyed.

I was told that this type takes a lot of time to cook properly, so I put one of my spoons inside the beans throughout the cooking period.
Then I put like one massive bulb of onion for less than 0.5kg.

I think she's just being real.

In the same post she made praising the little girl, she also mentioned she was going to shout at one of the children.

Perhaps, they look at her like a strict person, but I'm sure they know, or will know what a good person she is deep down.

Lastly, look at that little girl's smile.
It speaks volumes.
It corroborates the woman's story.
