I don't know what SEO skills are worth in the freelance market. Just looking at different budget to make a decision.

SEO is shit. I did SEO and content writing for about 2 and half years. Lucky if you got > $50 for SEO or content writing GIG.

I never purchased any video editing course.

Except you are going into video animation, then you'll require courses to improve.

You are wrong though, there is no niche that does not have too much people into it.
Secondly copywriting is a developing writing niche , copywriters are not as common as other writers like business plan, article/friction writers.

Thirdly, what's your target market, when it comes to freelancing, Nigerians are not the best prospective clients to target (very few pay well), your target should be foreign clients and not just any foreign clients but High paying clients. If you learn video editing , who do you want to offer your services too ?
