Bleach is good, I love it, but it has many fillers...
To watch it, you'll need a filler list to determine the episodes you need to watch and the filler episodes you are to skip...

Besides I'm not sure it's the sort of introduction to anime you would want

Depends on your taste in stories...
All the ones I recommended are masterpiece level and there are many more I know too...

If you really love a well-written story with complex themes, then Attack on Titan is for you...the show is almost done sef

True. I personally don't waste time on any anime with 70 or 100+ episodes and this is why I'll never pickup Naruto or One Piece. These are some with reasonable length:
