They actually can hold charge - that's what batteries are meant for afterall. But they shouldn't shouldn't deep discharged continuously.

You can, but it will die off in a few months or even weeks because car batteries are not designed to be deep discharged. They only provide large currents to start your car, afterwhich they go idle and get recharged by your alternator till your next ignition.
