Good day nairalanders and hope you are doing good. I could have put this write up in food section but since this was where I made my intention known concerning running a restaurant business I thought it wise to give you update here and gather more knowledge. The last time I talked about looking for money to rent a shop and start the business many advised that I start small even if it means by the road side and after thinking about it I decided to give it a try. So yesterday,I made my way gallantly to the market to get some little food stuffs(more like a prep). The scourging sun didn't make things easy but my determination got me going. Squeezed in my palms was a piece of paper which I opened periodically to spy at the list of items I'd written down ;DAfter spying,I squeeze the paper intermittently to avoid being seen as a novice in the food market even though it eventually became known to some of them who surprisingly, seemed to be charmed and even offered to help in any way they could. Eventually I felt relieved after leaving the market and I headed straight to home. Main prep: my first challenge was lighting up the gas cylinder. I had two match boxes but it seemed the witches and wizards were in my case that yesterday because non would ignite. So I hurriedly dashed out to get another one. Thank God that match box wasn't possessed and so the cooking began. Before the actual cooking I'd made sure I put everything in place like cutting the onions,spring onion,pepper,tomato in bits. Weeks ago,I saw a young guy with wine tinted hair color frying buns by the marketside,he was neat,cute and polite,he was aggressively calling out to people to buy from him.


I wasn't really interested in buying buns from him cox m not a buns person,I walked up to him,poured encomiums on him,bought lots of buns for my family and dashed him stipends.


Nothing thrills me than when I see a hardworking person defying all odds hustling legit.

Honestly e dey sweet me.

Update: My first task was preparing my meat broth which I almost did successfully until the demons came knocking again. While the broth was cooking,I felt something pirch my eye and in a bid to rub it off I unintentionally massaged my left eye with my hand already dusty from the grounded black pepper I added to the meat. Omo,Sodom and gomorah started to do their thing in my brain and I heard the devil laughing and mocking as the sensation of the pepper left my eye and made its way to my brain. grin With one eyes still visible,I quickly jumped to put off the cylinder not minding if the meat would protest about being half cooked. I picked my towel and like usain bolt,dashed to the bathroom to wipe the affected eye with water and also allow fresh air enter the eye. I became a bit relieved but then began to ponder if this cooking thing is my thing or maybe since I haven't graced the kitchen for so long,it affected me and turned me back into an amateur.

When I was relieved,I headed back to my meat broth and apologized to it before reigniting the cylinder again successfully, it began to cook again. After cooking,i put down the meat but decided not to fry the meat to save gas and time. My aim was the jollof rice so I had to make sure I spent all available resources on it. I proceeded to frying the puree after slicing onions on hot groundnut oil. As soon as the oil started dancing,then I knew it was time to introduce my puree. while it fried, I stirred continuously to prevent burning( though I left it occasionally to burn since I wanted that smoky Jollof taste). I then added grounded pepper,a bit of salt,Maggi,curry & thyme. After it had fried,I then introduced my grounded fresh pepper and tomatoes(a little ginger,garlic and tumeric was added too). I waited for a while for both the puree and tomato to cook together before pouring my meat broth. I rinsed the rice well and poured it inside. I was careful about the measurement making sure the rice was visible to the eye before covering the pot(I'd rather topple the pot with water in bits till the rice get soft). After some minutes,I added grounded crayfish, pepper,salt,spring onions. Carrot and peas would come last and then I throw scent leaves in.
