Mariangeles:These are interesting feedbacks here. Yes, indeed! Abidjan in Cote d'Ivoire is a VERY beautiful commercial city. That's why it's called the "Paris of Africa" for many years now. I first visited Abidjan via a commercial aircraft in the late 1980s and that country has maintained the proper planning with well-maintained majorly French and Japanese cars, wide boulevards and well-planned residential and commercial districts. They speak French and their indigenous languages such as Baoule (Baoules are directly related ancestrally to the famous Akan people who live right across the border in Ghana) but a significant number of them also speak conversational English. You should visit Cote d'Ivoire on holiday someday to get a hang of what I'm saying here. A massive population of Yoruba folks (from Ejigbo in Osun State and Oyo State, etc), for over 130 years now, have lived in Cote d'Ivoire and engaged in international trading and other occupations as well. Over 2.8 million of them live there and some have since become citizens of Cote d'Ivoire. They constitute the largest group out of about 3 million folks of Nigerian descent in that country based on data from the Nigerian Embassy in Abidjan. So, being a Gen Z chef or foodie that you are, I know that experimentation is the norm for you and others. Regardless, the preponderance of the #5 classic fried plantain diagonal cut ISN'T just because it's the major choice for folks of Nigerian descent, but it's the major "default setting" for sliced dodo in many tropical countries where plantains are naturally grown such as Jamaica, Philippines, etc. As for the use of olive oil (or any other healthy one like canola oil), a little quantity of about 100 mls in the fry pan is the best OR you can air fry the sliced plantain placed in a rack for about 15 minutes at 380°F (or 180°C) to get your dodo. Deep frying requires more oil use but then it fries faster and you may not have to turn the other side over with deep frying. Indeed, you've got great taste buds @Mariangeles, I noticed that too... palm oil has a distinct taste when used to fry plantains and when added to beans cooked in the pressure cooker than any other. I had to switch to olive oil back in the day when I started reading about some health concerns about excessive intake or use of palm oil. However, current medical research indicates that cholesterol ISN'T the primary cause of heart attacks or cardiac arrests but that cholesterol travels to the site of the existing damage in the heart to repair the damage. The research further indicates that the human body actually needs cholesterol from oils (such as palm oil) to synthesize other enzymes in the body for optimal health. This is why they say that majority of those who have heart attacks actually have NORMAL blood cholesterol. I found all that new medical research to be very insightful.
