This thread motivated me to start cooking… I just started cooking last year. The biggest motivator is GboyegaD”. His food post always make me look lazy… so I started watching YouTube channels how to make naija foods… that’s how I started cooking… and guess what?? I enjoy it to the fullest… I work from home, so I have all the time to cook and try different naija dishes…. And today, I cook all my food myself…. Even though nah only me dey eat the food for the house…. I used to pay a lady to cook those soups for me, but not anymore…: my soups now make sense pass the ones they used to make for me lol…

So yes, this thread is a big motivator… Infact, I registered an account with Nairaland because of this thread. I’ve been a visitor here for over 12 years…

Was desperately hungry and visited Toby Carvery. I don't understand what I ate, I was told to serve myself.

Pudding, mashed potatoes, turkey, beef and pork, greens.

The meat were not properly cooked.

The first 3 you mentioned are good for blood sugar control… no matter the portion, they don’t spike your blood sugar.

What about coconut flour or fufu? Does it spike?

Coconut flour is very good. It has more fiber even more than wheat. I think you’ll get about 72-75g of carbs from one cup of coconut flour… and with that, you also get about 40g of fiber… fiber helps control blood sugar… and with that high fiber, I don’t believe it should spike…

I might actually just bake something today with the coconut flour though… haven’t used it before

I don’t believe it should spike… but remember, serving portion is the key… one cup contains over 70g of carbs… so do you want to eat that much carb at one serving? Even though the fiber is high, at least half of that would still be released into your blood, but slowly though, not just a sudden spike and fall..

Most times when I eat oats for dinner, it doesn’t start raising my blood sugar till like 12-1am… I eat organic whole steel-cuts oat… and dinner at 5pm..

Alright then I will go with cauliflower fufu. But to prepare it will not be easy unlike garri or fufu that you can easily buy in the market.
