I’m planning a mini staycation in Jos for three people and looking to stay in a short-let apartment that is in a safe and serene environment, ideally with good proximity to these locations: Jos Wildlife Park Ten Commandments Monument Jos Museum 100 Steps to Afizere Rayfield Resort Mazah Waterfall We plan to stay for six nights around the Christmas holiday and we’d like a place with a kitchenette since we plan to cook our own meals. armyofone: 1. Cut one red bell pepper into small chunks and slice two or three green onions. Then cut one half of red habanero pepper and one half of the yellow one. You can replace it with chilli if you want. Fry everything for 4-5 minutes in 2 tea spoons olive oil or any veggie oil of your choice. I also cut and added three mushrooms because I had to use them up. But it’s not necessary. 2. Add one can of kidney beans and one can of chunky tomato sauce to the mix. Season with some black pepper, oregano and thyme to your taste. I added a little bit of powdered garlic and a little bit of curry too. Stir everything. 3. Then add 3-4 cups of bulgur and cover everything with vegetable broth. Stir properly. Let it simmer for around 12 minutes and check after 5-7 minutes if more water is needed. Don’t allow the bulgur to burn but the water should be fully absorbed at the end. You can replace the vegetable broth with water seasoned with cubes or all purpose seasoning. At the end, check if the bulgur needs more salt or cubes or whatever seasoning you like. My husband enjoyed it with chicken. I ate it with the broccoli that I boiled beforehand. Cheers! 1 Like |
