I usually cook my BR plain but you could use chicken stock or stocks in place of water.
If you use unsalted, add salt yourself. If you use the regular stock, careful with salt.
I am so used to brown rice that I don't like white rice anymore. It takes training to like it.
The only problem I have with it is it takes longer to cook. But it is faster by boiling your water first before adding BR.

I got this recipe from Martha Stewart,taste great!

1 tablespoon olive oil
4 bone-in, skin-on chicken thighs
Coarse salt and ground pepper
1 large onion, cut into 8 wedges
2 celery stalks, cut into 1/2 inch pieces
2 medium carrots, cut into 1 1/2-inch pieces
1 bay leaf
1 cup brown rice
DIRECTIONS

Heat oil over medium-high. Season chicken with salt and pepper and place, skin side down, in pot. Cook until golden brown on both sides, 10 to 12 minutes total. Pour off all but 1 tablespoon fat from pot; add onion and celery. Reduce heat to low, cover, and cook 20 minutes.
Add carrots, bay leaf, and 1 3/4 cups water; stir in rice and season with salt and pepper. Bring to a boil, then reduce heat to low. Cover and cook until rice absorbs almost all the liquid, 40 to 45 minutes. Let stand, covered, for 10 minutes before serving.

Ehh yeah sure you can. But I think it will need a longer per boiling stage since brown rice takes ages to soften..

If i may chip in. To get that lump intact, try make your Egusi mix as close to dry as possible, in other words no water, also you have to use powdered Egusi, not the one grounded with water, put a little salt, rub the mix inside a bowl, like you are kneading a dough, it gets to a stage, it starts to bring it's own oil, there after start rolling to your desired size, just the size half your thumb is okay.

I think I prefer my white rice joor.
I will also try that Thai rice chillisauce suggested.

I remember those days i make egusi soup, I mix the the grounded egusi with some water and make into a thick paste and then scoop with the cooking spoon into the already boiling meat, fish, one spoon at a time all around the pot and cook for some time and i always have those lumps.

You have to cook it like fried rice,add water little by little.....

It looks good but soggy as you said.... smiley

At least you tried,but you know what they say practice makes it better cheesy
