As I don dey try this Egusi - ehhh - e don sweet me well well ooo... I don kolo to taste am again, so na to learn the formula b the next thing ooo!! I nor fit relax, I wan chop am, the feelin too much self... so, I don carry my Oyinbo self go one local Afro-Caribbean shop, full my basket with all ingredients wey I wan use cook am. YouTube don help me sabi am na, so to cook am mysef b the next mata... If u go follow this Oyinbo wey to cook am eh, e go sweet u wella - Boil meat for one pot, add maggie cubes, thyme, paprika, small mixed seasoning, one chopped small onion for taste (you for use any meat wey u like sha, but me I dey use lamb & beef or chicken) - As u don dey boil meat, use the time to take one tin plumb tomatoes, one chopped onion & pepper (na the small red pepper oo - two I dey use, u fit put any amount wey sweet u - if na hot u like am add three/four) put all inside ur food processor - blend am well - The blended mixture u go now put for one small pot, no oil oo! Put am for high heat, make e cook well well... u go leave am for fire till the time e don reduce, don thick - As the mixture don dey boil, take ur melon seeds wey u wan use (1 cup) and blend am for food processor. U for use small water to blend ooo, so e go make a smooth paste, put am for one bowl, so u go add am to ur soup later - Check ur meat na, if e don soft (to the way u like am) take am off fire, leave am for the side, with the water... u go use small stock from this water to add to ur soup later. If e neva cook finish, reduce the heat small, keep checking until e don cook finish - Collect another pot, add small palm oil, make sure e don cover the bottom of the pan, roughly 1cm high. Put am for fire - The blended mixture wey dey another pot (tomatos, onion, pepper), check am - if e don reduce finish, turn off the heat/burner - Check ur palm oil na, if e don hot well well, start to dey smoke - ehen, e don ready b that. Add the blended mixture of tomatoes, onion & pepper - careful ooo - e go spit die - By this time I know say ur meat don cook, if u neva remove am from fire already, do so now - Take this time as u don fry ur mixture to wash the pots wey u don use finish ooo - u not wan finish cook with plenty washing to do na - Stir this ur frying mixture small ooo, make sure e nor go burn - As u don leave am to fry, cut Spinach into strips (the fresh one na the best one ooo) u for use scissors - e easy sha - Check ur mixture again ooo - if e don begin to dry small, add tiny stock from ur meat water, na dash u go dash am - Use ur nose to smell the frying mixture na.... if e don smell like e pepper don cook small, e don ready for the melon seeds b that.... Use one small spoon drop the grounded melon seeds into the pot, ontop the tomatoes, onion and pepper... keep dropping spoonfuls around ontop, spread am well covering everywhere - Let am fry small ontop the mixture for a few mins on high heat... after a few mins don pass, turn am well. These melon seeds dey stick, burn, well well, so now u wan turn am from the bottom regularly - As ur soup don thick small, add more stock water from ur meat - people like their Egusi with different thickness's, so find the one wey u like - Add two maggie cubes again to this ur soup - After roughly ten mins, e don cook b that add the meat to the Egusi and keep turning for another ten mins, this one go allow the flavours to enter ur meat small - Wen the ten mins don go, add the cut Spinach leaves and stir... after five more mins e don finish finally To serve, u for use Gari or Pounded Yam to eat am, some people even take Semo chop - na ur choice b that OMO THE THING SWEET DIE OOO - NOR B SAY ANYTHING... any help required, hunt me down https://www.youtube.com/watch?v=Pd7BpYpz7t4 You fit contact me here: Facebook - Oyinbo Princess Twitter - @OyinboPrincess 32 Likes 2 Shares
