It was actually too much. I've got lots of left overs. Thing is, they do love fried yams and it's been a while, so I was thinking today being Sunday and no early morning rush, they'll want a lot...but apparently not. Little madam didn't eat up all of hers either but no worries. Microwave dey. When they get hungry inbetween meals, they'll snack on them. Same as they did yesterday with the excess pancake. smiley

Oh, and I've been told by them on several occasions to cut the yams wafer / paper thin. embarassed Like seriously? sad sad

Efe, I totally get the wafer thin yam 'crisp' oh, it will be like yam crispy chips na grin. And as for snacking on left overs hmm, the use-fullness of a microwave is awesome. You know one of the reasons why catering for family without guest or 'outsiders' like househelps is so easy for me? we eat when we wake at weekends, most times twice a day and for the youngsters, snacks in betweens(healthy ones o) but when you have guest, there has to 3 square meals ugh! or else it seems you are starving them.

It's quite funny you say that because I've just had a small portion of plain porridge mixed with chuncks of pear and a scrambled egg (cooked without oil). tongue tongue

Missed brekkie, so that's serving as my lunch, along with the usual cherry tomatoes, cucumber slices, and a bottle of water. cheesy I'm totally off processed sugar. I get my sugar solely from fruits and nowhere else. smiley

Madam... What is Ukwa and what is use in preparing it
Ukwa is a food eaten by the Igbo's, it is also known as bread fruit.

Ingredients
Bread fruit (Ukwa)
Akanwu (potash)
Stock fish, fish.....(what ever you feel like using)
Red oil
Maggi
Salt and pepper to taste.


Preparation:
Boil about ukwa for about 10 to 15 minutes, add potash and cook till it is about 90 percent done then add about red oil, maggi, salt and pepper.

Do not stir, allow enough water and cook till the water is dried then serve.

You already know that this is not a Nigerian "dish", likewise , spaghetti , bread, baked beans , hot dogs, and other imported food articles that have found their way to our table !
You have to spoil your palate a little and taste the other side of life. Many women have said the same thing and maintained their stand until a strange woman prepare a strange dish for their husbands, and When the men refuse to return home, they run screaming into the streets that their husbands have been "hexed" with juju!
