1 . Boil the gizzards with salt, chopped onions and seasoning cubes. Then fry or grill whatever works for you

2 Dice the plantain into squares and fry obviously

3 Chop onions, pepper(atarodo) , green pepper, blend tomatoes and atarodo to make a paste just like you would normally do while making stew. Boil this until it's evaporated.(i.e losing all water content)
Nb/ The chopped vegetables are different from the blended one..

4 Take out some oil and pour in a deep saucepan or pot. Add curry powder, thyme and fry. not necessarily but I do this to increase the taste,Cooking by personal preference Fry for a minute or less

5 Add the chopped green pepper and atarodo and saute till it's quite soft-ish

6 Now add the tomato paste, stir till it thickens..

7 Add the gizzards and stock, once the gizzard stew thickens, add the plantains. yes lots of it as plantain is the major ingredient

Be sure to add salt where necessary...

Serve with rice or anything.. Whatever rocks your boat hunny!
