The second guy has even stopped selling his fish fresh as what he produces is always short off the demand he always get from outside the country. According to Onyekwere, there are two commercial ways by which you can go about smoking fish depending on the amount of smoke your customers prefer in the fish: klin smoking, and DDM method. miqos02:Hello Chief, just came across this thread on Robonski15's hit thread about catfish and I have to say I'm a bit surprised it's not been explored as much as it should(smoked fish). I do smoke catfish myself and I currently have 2 coal fired ovens that will smoke 100 and 300 fish at once. The major problem this fish business is the distribution channels. How do you get constant buyers. Let me know if you're interested in discussing this further. Let me see if I can attach photos of the ovens

KayDawodu:thanks boss, u are right about the distribution channel thing, i am only able to sell to individual buyers at the moment because most retailers are not nice with their pricing, but i am very optimistic of its prospects |

@ smoking your own catfish means value adding to your harvest which gives you more than 100% profit on your investment if you are selling locally and more if you are considering exportation but just smoking your catfish is not enough for the export market as you have to make sure your fish is smoked and packaged in a very hygienic environment and also the level of polycyclic aromatic hydrocarbon (PAH)is less than 5mg/kg of the product. Else the product will not be allowed into places like US and EU where you have large populations of customers for the product. PAH can be prevented to the bearest minimum by using the right desight of smoking kiln and the right power source (sawdust and firewood is a no no) call 08167488947 or email olowaolugbenga@gmail.com for the design of smoking kiln with temperature gauge, automatic oil and moisture collector, racks on roller etc 8 Likes 1 Share

lefarmer: Selling smoked fish is not a problem. Once you are able to package it neatly and use very good drying methods to produce a well preserved and tasty fish you can sell directly to office workers, supermarkets etc. Once you hv a good customer base, they will be looking for you instead. For export you need a special smoking kiln that can smoke the fish to have less carbon and other byproduct content. 2 Likes 1 Share

Etranshub:Maybe you can share pictures of the internal chambers of your kiln. And state what your heat source is. This is very important to an SME farmer working with a very tight budget. The kiln designed by Nigerian Institute for oceanography and marine research uses a charcoal source but yet PAH is within international acceptable limits with the use of a damper preventing smoke from getting into the drying chamber.
