All our body parts are sensitive, no doubt. However, some parts, such as the lips, tongue and hands, are more sensitive than the others. So because of the huge amount of information they send to the brain, they "occupy" relatively large areas there.

This is how we would look like if these overly sensitive parts grew in proportion to how sensitive they are:
