I have seen your works on this food section, and I must say that am really impressed. Especially for a guy to be so dedicated and hardworking like you.
The sky is sure your starting point by God's grace. I am a professional caterer too, but am based in Ibadan. May the good Lord be with you.
Amen

Hello sister, just a quick question. Is the rum alcohol? I'm still breastfeeding and couldn't take alcohol. If yes, please tell me what to replace it with. I had this drink in Sweden two years ago and I've been longing for it.

Yes It's alcohol. There's nothing to replace it my dear. It is what it is. I had it in the Bahamas islands last year and I longed for it so much I just decided to google how to make it myself.
And I'm breastfeeding too. Lol. Bad mother lipsrsealed

What I do and What you can do is to take it and feed your baby formula instead of breast milk for at least two hours after you take it. (I usually go more than hours just to be very sure). Then after two hours you can breastfeed as normal because that is how long it takes for one drink to completely clear from your system. Unless you over-indulged.

Or you could just buy the mixer. It's piña colada flavored without the alcohol. In fact that's what some bars use with crushed ice and rum to make their piña coladas. I was tempted to buy that but I felt it won't have the kick it supposed to since there's no alcohol in it. Picture below.

You can also make a non alcoholic version i.e virgin colada: just omit the rum! And increase your pinapple juice & coconut cream quantities to make up the volume.

Not quite the same thing as that with rum but hey! Half bread right!

Recipe
1kg flour
3 tablespoons of yeast
250g sugar
100g of butter
2 eggs
Pinch of salt
2 cups of ordinary water
This recipe gives 20 doughnuts

Procedure
1. Combine flour, yeast, sugar, salt, egg and the water together
2. Work the butter into the dough and mix well.
3. This step determines your getting something like the one I made. Transfer the dough to your work surface, now it's time to show your kneading skill. Knead with force.....yes knead vigorously till the texture and the temperature of the dough changes from cold to warm/hot. This can take up to 15 minutes or more.
4. Once you get the warm temp, proceed to cutting the dough into 20 pieces.
5. Dust two big trays with flour.
6. Shape into ball and leave to rise for an hour on the floured trays.
7. After an hour, deep fry on low heat in a big pot and check both sides till both sides are done.

Notes.
If you ask me why cold water was used I might not be able to answer unless I ask my teacher *winks*.
Kneading vigorously helps in activating the yeast. The first time I made this type of doughnuts I didn't knead it very well which didn't make the dough rise very well.
Try and be generous with the flour to prevent the dough from sticking to the tray.
Be sure to fry on low heat to avoid "ijina ako".
If you like sugar on your donuts, sprinkle it on it while it's still very hot.

Puff-puff recipe
Cc: Zheemub

Flour-1/2 congo
Yeast- 2 teaspoon
Sugar-1/2 cup
Nutmeg-1 teaspoon
Baking powder- 1/2 teaspoon
Salt- 1 teaspoon
Vegetable oil for frying

Procedure
Pour all dry ingredients in a big bowl.
Add the warm water and mix very well. (you don't want to use very hot water, so as not to kill the yeast)
Cover with kitchen towel and place in a dark place for 1 hour.
After 1hour, bring it out....then mix vigorously such that you deflate the air in it (this process is important to get the "roadside-like" puffpuff).
When you're through with this process, you'll be left with half the original risen size
Heat your oil and deep fry. it's important to deep fry ooo or else you'll be eating puffpuff pancake. (ice cream scooper is ok, if you're not skilled with the hand technique)
Enjoy your puffs.

(baking powder helps in the getting the nice round shape, nutmeg has a way of giving it a deli-taste too and yeast feeds on sugar so you might want to consider adding a little more....)
