Egusi soup is one of the widely consumed soups in Nigeria. Just Like the party Jollof rice,no event is complete without the sumptuous egusi soup. The soup is rich in Protein,fats and oil, Omega 3 acid,fibre, amino acid,minerals...Below is a breakdown on how to go about preparing this soup. Note that their are different methods for preparing this soup but the method used below happens to be my best. By the way,Juls cook-up corner is a maiden innovation on nairaland by your's truly...(blushes)
RECIPE
palm oil
ground egusi
chopped ugu(you can also use uziza leaf,scent leaf in little quantity) pepper(fresh and camaroun)
bouillon cubes (Maggi)
crayfish powder
teaspoon salt (to taste)
Precooked Goat Meat, Beef,Ponmo and stock Fish(These are my choice for the meal-you can use whatever choice of protein that suits you)


wash the meats of your choice properly,season with bouillion cubes,salt,Onion... and place on your source of heat to cook.

pour grounded egusi in a bowl,
add a little quantity of water to form a thick paste and set aside

wash ponmo properly with salt. use a knife to scrap out the inner part so as to get rid of sand and other unpleasant matter. you may use an Iron sponge also. dice into desired sizes and add into the pot of meat which by now should be almost cooked( note that I used this method cos the ponmo I bought is not hard). turn off the head after 5 minutes

pound/ blend your fresh pepper and onions(I prefer to pound)

place a pot on the source of heat,add some palm oil(moderation is key),allow to heat for 20 secods,add your Onions and grounded pepper and allow to fry for a minute,pick up the bowl of soaked egusi and a spoon and scoop it in small sizes into the pot of oil( if you do not want the lumpy style,you can pour the thick solution all at once and fry...back to my scooping and frying). allow to fry for some minutes..your instincts will let you know when the egusi is well fried.

pour in the boiled Meats and Boiled stock fish as well as their broth and stir, at this point you should taste for salt(the one you used in boiling the meats may just be sufficient). If needs be,add more salt and bouillion cubes. add your crayfish cameroun pepper... Allow the mixture to cook for some minutes.

add your chopped ugu leaves,bitter leaf,scent leaves...(I used ugu leaves and a little of uziza leaves for the extra flavour).

Allow to cook for 5 miutes( you dont want your vegetable(s) to loose its nutrients,do you?) max and voila,your egusi soup is ready...

You can enjoy this with a swallow of your choice or Rice....I know someone who would do so with a Bowl of Eba....

The soup look delicious. Sadly, an increasing number of Nigerians here in Nigerians cannot afford to cook this kind of soup anymore due to rising cost of foodstuff. 1 kilo of goat meat is ₦1200. By the time you add the cost of stockfish, let's say ₦500 and then other ingredients such as 75cl bottle of palm oil going for ₦400, then crayfish ₦200, then egusi ₦400, the ugwu ₦100, fresh pepper ₦100, onions ₦100. Shey pot of soup don pass ₦2000?

So you see, in this harsh economic times, one must buy fresh okro ₦300, one titus ₦350, ugwu ₦50, bottle of palm oil ₦400, crayfish ₦100, onions ₦100. Okro soup is ready for less than ₦1400. The remnant palm oil can be used to cook again. Man must manage in this tough times.

My broda, Na okro we dey chop since ooo. You can cook okro and eat it for 2-3 days then buy ogbono and fresh okro + ugu the next day. Continue the circle with interchange of rice and beans in between.

#rollseyes.... dear,it all boils down to choice. I used Goat meat et al cos I could afford them at that time. There are cheaper alternatives to making this soup: a cup of Egusi, little or no oil, a small bunch of ugu, a few pieces of Meat.....all these will amount to 500 naira or less. You see bro,desperate times calls for desperate neasures and in this context,I mean economy. You should be able to cut your coat according to ur kinds if needs be....

Uziza leaf is sold by those Igbo women in the market. All you need do is to ask them... Ogbono soup all the way...
