Sup y'all. I discovered how to cook rice and the baddest stew the right way for the first time yesterday. I know what you are thinking. You are thinking "rice? no be to wash am put am for fire?" Well it takes more than " Wash am put am for fire". One thing i hate more than anything in this world is mushy gummy rice. It's always a problem for me because if one is not monitoring the damn thing, it may come out like that even if you parboil it. Not anymore. First let me start with the stew. The ingredients are; 1. 12 habanero pepper/Rodo 2. 1 Tatashe/bell pepper 3. 1 Titus fish 4. Crayfish 5. Any kind of assorted meat 6. 1 Tomato 7. Palm oil 8. 1 Onion 9. Eggs 10 Curry and thyme 11 Maggi cube Chop up half of the onion in tiny bits and set aside. Boil your titus fish for like 3 minutes and set aside. Boil your meat and cut them up in one and a half inch slices. Set that aside as well. Blend the pepper and tomoto with onion in grate mode. Which means the mixture will not be too smooth. Pour it in a pot to boil till all the excess water is gone. Set another pot on your cooker and pour some oil in it. Add the diced onions into it and let the onions caramelise. Add your meat and fish into the pot to fry with the onions. When they are well fried, add the pre boiled pepper and tomato into the pot of fried meat/fish and onions. Now add the curry and thyme with your eggs if you boiled some and cover the pot with your heat setting at medium. Mix very well and cover. The best way to know if your stew is done is when the oil rises to the top of your stew and the pepper is sticking to the meat which is why you have to be careful not to use too much oil. A minute before you remove the pot add one maggi cube and you are done. I did not have any fish so i used chicken. Fish is better though. Now for the rice. There is no measuring. Just put the quantity you want in a pot, wash it, add salt and parboil it. The way to know if it is well parboiled is if you pick one of the rice, squeeze it with the tip of your finger and you will see the core is still white. Or, you can taste it and it feels done but still gummy. When you've determined it is well parboiled, pour the rice into a sieve and let it rest. Now take your pot, rinse it out and put it back on the cooker at low heat. When it is dry, add a little butter or oil to the base and pour the rice back into it. Do not add any water. Now cut out paper towel big enough to cover your pot, place it on it and and cover it with the lid of the pot for 45 minutes. And that's it. 8 Likes 2 Shares
