Don't tell me that humans can fly, respawn, throw fireballs, survive a jump from space or something like that. Those are just fictional additions for more excitement.

You are either being dishonest or you don't know what realism would mean in a game.

Let's use Call of duty as an example, if they decided to prioritise realism over a fun gameplay elements what you would have is game where your character can run for minutes but gets killed or incapacitated in one shot, where you and your team could shoot at the enemy for hours without casualties on either side etc...

Personally I just think you're looking for an easier gameplay experience, where you can run endlessly through a level shooting everything that moves.

These quirks in video games are called gameplay mechanics, they serve the purpose of making games engaging, fun, challenging or even easier.

Mostly, the things game developers have a hard time keeping real are game physics and interactive mechanics.
I mean the way objects in the game interact with each other.
Take Watch Dogs for example. It has trash car impact and water mechanics.

E.G Carrying an LMG and run the same way one would when cArrying an SMG, recoil rate, car crash impacts etc

Honestly i don't understand, are you saying the player should run differently based on the weight they're carrying?
If that's what you mean then I agree, that has also been implemented in some games like ES: Skyrim for example.

Ok, well there are things they've not been able to nail down, like the fact that your head's position is always weirdly placed in FPS games, or how you're either running too fast or walking too slow when you're supposed to be following someone.
