I have absolutely no idea how much water it would take to flood the earth such that the highest point at that time - or any time - would be covered.

The earth would have been vastly different at that time. Climate, topography the works. Don't forget according to the biblical account rain wasn't even a thing. The Earth was like a perfectly configured biosphere.
