A concoction of leftover things in the refrigerator that I didn’t want to waste.

Beef stew, steamed vegetables, fried plantains. I just added rice noodles and it was done in 10 mins:
And It ended up tasting good. Very spicy too.

I think the the colour occurs due to enzymatic browning that occurs during drying.

Poundo yam is white because of the sodium metabisulphite added to it to slowdown/stop browning.

I've seen them do it .
It's the yam peel .
After drying, they grind to flour, then sieve out the sand .

Exactly, it's the process and that darkness there is actually an indication of iron which is produced during the fermentation and drying of yam. Same as unripe plantain. It doesn't have to be with peels.
My grouse with amala( IMO ni o cheesy) is that without the requisite delicious soup, it is tasteless. I also hate the washing up of utensils after cooking it. Give me pounded yam any day, it's a winner. I guess I am simply an idoma girl at heart.
