It's actually possible. I've used such a procedure to move from global to Chinese rom before on an old device, some years back.

But you will need PC to switch from global rom to China rom or eu rom

You just ordered a CHINESE version. It lacks Google Play services I.e no playstore, Google maps, gmail, Google drive and all. And the phone has 2 languages only. Means you'll have to side load Google Play Services into it. The CHINESE version is for those who live in CHINA, Global version for outsiders.
