I will soon convert it to plantain foofoo.

These days I can use anything to make foofoo as long as I have my binder which is oat.

If u want to make bitter leave or oha soup but don't have that anambra cocoyam(there is a type of cocoyam in the market called anambra cocoyam. don't know why it's called so) use oat flour.
It's the same texture with that cocoyam. U will never notice the difference. Small small until u achieve a perfect consistency of your choice. blender can do the magic but if no blender, good old mortar and pestle will do.

I'm confused here.

My submission is purely based on Nigerian nutritional indices. Guy,
If u have had the opportunity to take care of a diabetic patient( which I had by the way),
U will know that their dieticians recommends
Turkey, cat fish not mackerel, chicken without skin as alternative to Turkey, no goat meat or beef.
No yam. No foofoo. Garri but white and yes,diabetic patients have their own type of garri( it's like ijebu garri but it's not ijebu garri)
If the person should eat beef, it's always cow head, no skockfish, rice in little quantity or brown rice( what we call brown rice in Nigeria is actually not it). Heard it's in the north. A little spagetti but not dangote product.

I handled an elderly man with 15 yrs of diabetes and he was certified diabetic free by his Dr and his nutritionist was shocked to the marrow. So u don't tell me zilch about healthy food bro.
Now tell me what the foods I listed up there got to do with people outside Nigeria cos they were what I listed on the post u attacked?

That's not possible. He's a diabetic avoiding medication through diet, but the same problem exists in his body. There's no known cure for any type of diabetes.

I understand your perspective a bit more though. However, you should understand that diabetics must carefully manage their diet to not only avoid sugar spikes, but also anything that will interact poorly with medication/treatment. Red meat, for example, is rich in iron. That presents a problem for them, but healthy, active people need it.

You should also remember that research and assertions tend to follow what industries are trying to sell. Thousands of years of consumption, nutritional value, and overall health and fitness in a population are more indicative of the truth IMHO.

Another tidbit to note is that claims about certain foods are often based on not only biased studies, but inaccurate info that neglects things like making a distinction between a boiled or fried preparation, or lean vs. fatty cuts.

But I'm not claiming to be an expert, so take what I have to say with a grain of salt.
