Lol. I always cut mine to be very tiny. That way they don’t need struggle, one in your mouth and you are good to go.

While the pan frying with your chopped tomatoes and onions...u pour in ur already beaten eggs in the pan..wait a bit for 3-4secs before u start scrambling (mixing quickly) together with the sauce.

@the emboldened...yea. With that the egg gets to coagulate a bit b4 scrambling.

I boiled the plantain first before adding to the eggs.
You can fry yours if you prefer it that way.
