pocohantas: Thank you so much Pocahontas!!! I followed all the steps judiciously and I must say I just made the best jollof rice I have made in my entire life. The little things, like water level, heat intensity, time of ginger and correction of seasoning, foil etc, made all the difference. Everything was just right! Everyone had second helpings.
