You should certainly do 2s4p, running 1s if not optimal at all and the reason your wire is hot is because of the current coming in at peak hours due to the 6p(and small wire guage you are using). So if you can get 1 more panel to make it 9, run 3s3p else run 2s4p if it's 8 in total

get a decent mppt CC, powmr is just 82 dollars shipping inclusive on aliexpress, or you buy the one of 65k advertised recently by zeestone or justmenuel.
any other thing you are doing is wasting time, unless you go buy 35mm or 50mm cable and run your whole array at 1s6p, ok since u said you got 2 more panels, you could run 2s3p, careful you dont exceed the Voc and wattage rating of the CC

its a good plan, i would recommend a hybrid inverter to simplify things, since it has various settings designed for what you have in mind, such as AC priority, Solar Priority etc.
growatt and sorotec are decent hybrids that i would recommend, a 3.2kw should do fine. minimum of 8 x 300w panel is ok, though more is better. if you are going for 4 batts of 12 volts 200 amphour

The gauges are not precision equipment, they sometimes get stuck. So, don't rely on them, always make a visual check.

eggzactly, i really dont understand why people buy pwm CC, e no make sense at all, worse even 60amps pwm cc, if na 10 or 20amps for street light i fit understand, once your panel pass 600w, makes no srnse going for pwm. This has been sounded here repeatedly....
