When writing the SOP is it advisable to state that one attended a university previously because of the gap that will be noticed since my graduation

Your case is plausible you just have to explain all in your Sop to the visa officer and why you want to study in Canada with your first year transcripts as proof.

Not necessarily, only if you're not able to justify your study intent in proving to be a genuine student. You have to have a good study plan, future plan(s), funds for the first year study, and tangible home ties. If all these are met, then, there might be a chance.
