Okoro Soup. This West African dish is rich, flavorful, and perfect for sharing with family and friends. Here’s the step-by-step guide: Okoro Soup Recipe Ingredients: 25-30 pieces of fresh okra Palm oil Assorted meats (Shaki, Ponmo, Cowfoot, Beef, Goat meat) 1 big red bell pepper (Tatashe) 5 chili peppers (Shombo) 2 Scotch Bonnet Peppers (Atarodo) Smoked fish Fresh prawns 1 cooking spoon of crayfish powder 1/2 cooking spoon of locust beans (Iru) Onions Bouillon cubes Salt to taste Instructions: Prepare the Meats: Wash and boil the assorted meats (Shaki, Ponmo, Cowfoot, Beef, Goat meat) until tender. Set aside. Blend the Peppers: Blend the red bell pepper, chilli peppers, and Scotch Bonnet Peppers (Atarodo) into a smooth paste. Cook the Base: Heat palm oil in a pot. Add chopped onions and sauté until translucent. Add the blended pepper paste and cook for a few minutes. Add the Meats and Smoked Fish: Add the boiled meats and smoked fish to the pot. Season with bouillon cubes and salt. Simmer for about 10 minutes. Prepare the Okra: Wash and slice the fresh okra into small rounds. Add the okra to the pot and stir well. READ MORE |
