Did some about 15 mins ago. Must admit that it takes a lot of cooking oil to fry them. I used the boneless saltfish. They are for my daughters church picnic tomorrow. Have to give some to my neighbor too. Hope she enjoy them Blessings SALT FISH CAKES 1/2 lb. salt fish 1 lime 1/2 tsp. sugar 1 tsp. yeast 1 c. flour 1/2 c. milk 1/2 tsp. baking powder 4 red and green sweet peppers, finely chopped 1 piece of hot pepper, finely cut 1 med. sized onion, grated 1 beaten egg 1/2 tsp. thyme Wash salt fish in lime juice and water. Bring salt fish to boil, strain, repeat and rinse in cold water. Remove skin and bone and mince. Add sugar to water, stir in yeast, leave for 10 minutes until yeast rises to top of water well. Make a well in the center of flour mixture, pour in yeast and milk and mix, beat briskly to make a smooth batter. Add minced salt fish. Stir and continue to beat batter briskly, add chopped green and red sweet peppers, hot pepper and onions. Blend batter well to mix in herbs. Stir in beaten egg and mix briskly for best results. Set aside, covered for 30 minutes. Fry in desired size in hot oil until brown. Fry one batch at a time, drain on brown paper - do not put fish on top of each other. http://www.cooks.com/rec/view/0,1617,154165-243202,00.html |

One of my favourite after dinner desserts is a banana fritter covered in tasty golden syrup Enjoy Banana Fritters Ingredients: 1 2/3 cups all-purpose flour 2 teaspoons baking powder 2 tablespoons confectioners' sugar 1/4 teaspoon salt 2/3 cup milk 1 egg 3 bananas, mashed and sprinkled with 1 teaspoon lemon juice to keep from discoloring oil for deep frying confectioners' sugar Preparation: Measure, sift and mix all dry ingredients. Whisk together the milk and egg; add to dry ingredients. Fold in the mashed bananas. If too thick add a little milk, and if batter seems too thin, add flour. Batter should have consistency to mound up in a spoon. Heat deep fryer to about 375° or add 1 inch of oil to a deep skillet or kettle and use a deep fryer thermometer to check tempperature. When fritters will cook in 5 minutes, the oil is ready. Drop by spoonfuls in small batches. As fritters brown on one side turn. Drain on paper towels. Keep warm and just before serving sprinkle with cinnamon sugar or powdered sugar. Serve warm with syrup, if desired. Serves 10 to 15. http://southernfood.about.com/od/doughnutsandfritters/r/bl90626d.htm |

scalloped potatoes This was an easy one for me. I added a layer of ground beef (trying to get the iron in) in the middle Peace Ingredients: 4 cups thinly sliced potatoes, about 6 to 8 medium potatoes 2 tablespoons flour 1 teaspoon salt 1/8 teaspoon pepper 3 tablespoons butter 2 cups scalded milk 1/2 cup shredded Cheddar cheese Preparation: In a buttered 2-quart baking dish, place a layer of about 1/3 of the potatoes. In a cup or small bowl, combine flour with salt and pepper. Sprinkle about half of the flour mixture over the potatoes; repeat with another layer of potatoes and the flour mixture and top with remaining potato slices. Dot with butter then pour hot milk over potatoes. Cover and bake at 375° for 45 minutes. Uncover; sprinkle cheese over the top. Return to the oven and bake, uncovered, for an additional 15 minutes, or until scalloped potatoes are tender and cheese has melted. Scalloped potatoes serves 6 to 8. |

I tried this recipe. its delicious Ingredients 225g tuna 1 cup Cheddar Cheese (grated) 1cup chopped onion (Sauté) Parsley for garnish tart pastry Directions Preheat oven to 180°C. spread pastry over tart pan Spread tuna evenly on the pastry. Mix cheese and onion and spread mixture evenly over tuna and garnish with parsley. Bake until cooked ± 30 min and serve warm. I added a little twist: spread dijon mustard ( grey poupon or maille) on the pastry before the tuna, then thinly sliced tomatoes before you sprinkle the cheese. instead of cheddar, i tried mozarella and swiss. |

@nila, that sounds yummy. I am going to try it tonight |
Re: Recipes I have tried by nila07: 3:43pm On Aug 28, 2008 |
@Amakaone, let me know how it turns out. also, what i did, was make my own tart pastry which is better than the store bought one and so easy to make. or u can just buy puff pastry. here is how to make tart pastry: (the same pastry can be used for fruit tarts) Place 250g (8.8 oz) of plain flour in a large bowl, and add 125g (4.4 oz) of butter. Rub the butter into the flour with your fingertips. Don't squeeze it as this will crush all the air out. Rub it gently, lightly lifting your fingers as you go. Keep going until the mixture resembles fine breadcrumbs. Add 2 to 3 tablespoons of water to 1 egg yolk and quickly whisk with a fork. Make a well in the middle of the flour mixture and add a little of the egg and water. Work the mixture in, adding more egg and water until it begins to form a ball without being too sticky. If it's too dry, add a little more water. Shape the dough into a ball. Wrap it in cling film and place in the fridge for at least 1 hour to chill. 1 Like |

@ nilla thanks for the pastry , do I use chilled water for this or is ordinary tap water ok? I read somewhere that chilled water makes the pastry better? I will try take some pics of the finished product and post them if it does not turn out too badly |
