Royal Icing is the normal traditional hard white icing, made from the mixture of icing sugar and egg white (I think) while butter cream is the soft, creamy one.

I can easily see that both have their merits and demerits, like butter cream may be unstable and melt on a hot day, but from an eater's perspective, I find royal icing totally useless because I don't fancy ingesting hard concentrated sugar so I peel it off and throw it away. Personally I prefer the butter cream because it is more edible.

Professional bakers and eaters what is your take on the matter.

For me, with the knowledge I've garnered from making confectioneries - I'd say Butter/Cream Icing cuts it better for me and most clients.

It's one topping on cakes/confectioneries that people can't ordinarly resist, even weight watchers wanna take a finger lick!

Butter cream is the favorite of almost all cake lovers. People rarely ask for royal icing now. For me royal icing is basically used to design fondant cakes.

I would go for butter icing, just that it doesnt dry quickly.

I first thought you were talking about every day cake. I don't know "royal icing" but between butter cream and whipped,
it's whipped cream anytime!

Butter cream doesn't dry at all. It only hardens if refrigeratee but becomes soft within minutes of leaving the refrigerator.

I like both though. I love the fact that royal icing dries on the cake.
