Egusi soup is a vegetable soup that is prepared with melon seeds. It is mostly prepared by people of southern part of Nigeria. Egusi soup is known as Efo Elegusi in Yoruba, Miyan Gushi in Hausa and Ofe Egusi in Igbo.

Egusi soup is highly rich in fat and protein, which can aid for weight gain and wellness. It is also a popular soup in Nigeria, which can be served with Garri, Semolina Fufu, Amala, Cassava Fufu and Pounded Yam. Egusi soup is a healthy soup that would help keep you healthy and safe from illness. Egusi soup can be prepared with the following ingredients:
• 600g Egusi (Melon) seeds
• 2 cooking spoons red palm oil
• Beef and goat meat
• Fish: Dry Fish and Stock Fish
• 3 tablespoons ground crayfish
• Pepper and Salt (for taste)
• Vegetable: Nigerian pumpkin leaves, spinach or bitter leaves
• seasoning flovours
• 1 Ogiri Okpei (traditional locust bean seasoning: optional)
• half litre of red palm oil What to do it
1. Before you start cooking the soup, clean the the dry fish, remove the bones and sock it in a basin of hot water for 20 minutes.
2. Boil the stock fish with one litre of water, add seasoning flavor, salt and allow it to boil for 30 minutes.
3. Wash the beef and goat meat to be used for the soup, add it to the pot and cook on medium heat till done.
4. After 25 minutes, add the cleaned dry fish to the pot, steer it , cover the pot and allow it boil together.
5. After 20 minutes, open the pot, use your spoon to cut the stock fish and dry fish into smaller chunk, add small water and leave it to boil for 5 minutes.
6. Add the grounded egusi, add some water to make it a bit thicker and Stir. watch it closely so that it does not burn.

You are a serious amateur, so what happen to the other ingredients? The oil, crayfish, okpei, etc. Incomplete process and a bad method.
