I think I'm clear now on the much hyped GCam ....I'm ok with my follow come camera with portriat mode. I'm sure Xiaomi will soon release MiUi 10.0.02 which will do the needful

Just forget about an update improving your camera performance from Xiaomi, has happened only with flagships.

I'm lost here ....my bootloader is not unlocked nor is the device rooted. I installed GCam and I can take photos with it and its not crashing

Which gcam?
There are some gcam apps claimed to work without enabling cam2api but you won't get good results, maybe that's why you're not noticing differences....OR maybe it's Google camera and not gcam grin

So u r rocking Gcam without the stress of bootloader unlocking TWRP recovery lazyflasher camera2api
