THE NEED FOR NUTRITION
It is essential that we understand the importance of proper nutrition and the impact it has on the health of the individual and indeed the nation. Proper nutrition means a balanced diet – which is critical to maintain normal body functioning and for the strengthening of the immune system. When one looks at the quality of food over the past fifty years, it is obvious that the nutritional value is deteriorating, even though the taste and presentation might be improving.
Let us examine what has happened to the quality of our foods.
• There has been an increase in POLLUTION from factories, car exhausts and open fires. This smoke stays in the atmosphere until it rains. The rain falls through the polluted air and what is known as acid rain falls onto the crops. The resulting acid rain destroys some of the nutritional value of our vegetables and fruit.
• During the manufacture of tinned and processed foods, excessive temperatures are used to preserve the food. This HEAT also destroys some of the vitamin and mineral content.
FREEZING food also causes the vitamin and mineral content to deteriorate.
• Adding chemical FLAVOURS and COLOURANTS has a detrimental effect on the processed foods that we eat.
PESTICIDES sprayed onto crops reduce the vitamin and mineral content of fruit and vegetables.
• There is less land for farmers to grow their crops while expecting better and better yields, the same fields are thus re-used year after year. To be able to do this farmers over-fertilize the soil, which means that the vitamins and minerals in the crops are again reduced.
• There has also been an increase in the amount of FAST FOOD that is consumed. In the past, families ate healthy home-cooked meals each day. Now, we are a generation of junk food eaters and our bodies are not getting all the nutrients that we need.
It is clear that while we are always aiming to improve the taste and the presentation of our foods, we cannot rely on them to give us all the vitamins and minerals necessary to provide a balanced diet.
