Here is an amazing and a delectable Nigerian chicken pie you can make for your family this weekend, you can make it more enticing by forming different shapes out of it.

INGREDIENTS:

1kg (2.2 lbs) plain flour (All Purpose Flour), 300g margarine, 2 teaspoons baking powder, ½ teaspoon salt, 1 glass of whole milk or water, 350g (1.1 lbs) minced chicken, 2 small Irish potatoes (spuds), 1 small piece of carrot, 1 white onion, 1 cooking spoon vegetable oil, 2 seasoning cubes, 1 teaspoon thyme, 2 teaspoons Nigerian curry powder, 1 teaspoon plain flour, Salt (to taste) , 1 egg.

PREPARATION STEPS

STEP 1: Rinse all ingredients that needs to be rinsed

STEP 2: In a medium sized bowl,Place minced chicken, then add the stock cubes (crushed), thyme, salt and some of the curry powder till combined.

STEP 3: Cover and place in the fridge for 20 minutes.
STEP 4: Peel and cut Irish potatoes into medium cubes,Scrape the carrot and grate. Also, dice the onion and set aside.

STEP 5:Boil the cubes of Irish potato in water, add salt to taste. Cook till done ( ensure that it does not get too soft)

STEP 6: Decant the water from the potatoes and set aside.

STEP 7: Bring the chicken out of the fridge and place a clean dry pot on the stove.

STEP 8:Pour the vegetable oil, allow to heat, then, pour in the sliced onions.

STEP 9:Add the chicken, Stirring it vigorously

STEP 10: When the chicken gets pale, add a small quantity of water and the remaining curry powder.

STEP 11: Add the boiled potatoes and the grated carrot.

STEP 12: Cover and boil once again, adding the thickener prepared above.

STEP 13:Stir very well, addIng a little salt if necessary and set the filling aside to cool down completely.

TO PREPARE THE DOUGH:

STEP 14: Sift flour into a large sized bowl

STEP 15: Add the baking powder and salt and mix well.

STEP 16: Using a spoon, add the margarine in small scoops.

STEP 17:Mix using your hand until the mixture appears as crumbs.

STEP 18: Add whole milk or water, in bits and mix until a dough is formed.

STEP 19: Leave the dough in the bowl, cover and set aside to rest for 10 minutes.

STEP 20: Knead dough again for a more softer and smoother result

STEP 21: Rub margarine all over the inside of your oven tray and set aside.

STEP 22: Break the egg, beat it and set aside.

STEP 23: Roll out the dough on a flat surface and make round cuts on the dough using a dough cutter.

STEP 24:Scoop some Chicken Pie filling into the center of the round dough.

STEP 25: Rub the egg on the inside edge of the round cuts, then close it tight using a fork.

STEP 26: After undergoing this process, rub egg on finished pie to get a shiny result.

STEP 27: Ensure that your oven is preheated and bake at 180°C till light brown.

STEP 28: Serve in desired style with a chilled drink, preferably not soda.
