Hi all!

I've got three people coming round for dinner this Friday at at about half seven. Thing is I don't get home till about 6.45pm.

I was wondering if anyone had ideas of something quick and relatively easy to cook?

I was thinking grilled chicken with fried plantain and a sauce of some sort.

Ideas will really be appreciated for a main or for any other thing I could serve, I'm really stuck.

You can actually prep food like Fried rice in advance so that you just finish it up before your guests arrive.

You can chop up the vegetables ( frozn veggies will significantly cut cooking time) , and parboil the rice till its  almost cooked the night before .

Day of Event

Stir fry Rice , chopped onions and spices  in very lil cooking oil ( i actually prefer to use half a stick of low fat margerine or butter, because it makes the rice non- greasy)

stir fry Vegetables ( you can also lightly brown some shrimp or diced chicken bosom and add to this mixture), you can add some chicken stock for extra flavour when the vegetables are cooked but still crispy

combine rice and vegetables . with a lil water or cooking stock for a few minutes ---- and you have low stress fried rice.

Fried plantains and Grilled chicken are sides ( unless your guests are not naija)

You can also do the same with pasta . Boil pasta till done and strain, Make a sauce with ground tomatoes and peppers ( You can add ground meat , shrimps, diced chicken bosom or what have meat you fancy)

On the day of combine already cooked pasta and sauce . I  like to throw in spinach or basil  for colour and flavour

It depends on who ur guests are. D fried rice wld do or egusi soup wit semo. U cld boil d meat d nite b4. Egusi is quick n stress free n semovita/lina too.

No, they are all Nigerians. I was just looking for an easy way out by just making plantain wink, I think I will probably just make rice.

Making egusi will make the house smell, from smoking the palm oil and I haven't got time to air the hse out.

Any other suggestions?

just buy the very dry bread and zobo i promise you they would never come to your creeb for dinner again.
