I have noticed that Indian shallow and deep frying rarely involves wheat so I tried using a mixture of rice and green grams.

Ingredients:

Green gram - 1/2 cup
Rice - 1/2 cup
Yeast - 1/2 tea spoon
Sugar - 1/4 cup
Coconut milk - 1/4 cup
Shredded Coconut - 1/4 cup
Milk (to just below the level of the grains while blending)


Milk
1. Wash and Soak the green gram and rice overnight in seperate containers.
2. Next day: wash the green gram and the rice and put them in a blender. Add the coconut milk. Add the milk to the level of the grains. Add the shredded coconut on top and blend to a thick consistency.
3. Add the sugar and yeast. Stir to mix in then blend it. Let it rest for at least 30 minutes.
4. Oil your pan and pour small portions then spread it thin.Turn when one side browns.


#note: The thin ones taste better. If you make it too thing they get the raw green gram taste
