Oga there is no standard way of cooking. All u need in the kitchen is common sense on hiw to regulate heat and when to add ingredients to your own taste. Why didnt u complain about the salt as u don taste am thru online already? Why u no complain if na fresh pepper or dry? Why u no complain abt how many maggi e put? Why u no ask of goat meat? Not everybody even fancy the thick egusi, so boring. If u wan see where dem dey abuse egusi try visit Abuja. Their own be like say dem just boil egusi inside water come put salt n meat.

There are a dozen more styles in preparing this dish. Each culture has got its own. If I hadn't gone to Abuja, I would never have known one can use scent leaves instead of the usual ugwu or bitter leaves that I've always known since my younger years.

This my style would make the melon like fish eggs.

Haba...you just talk like say na you invent egusi soup. Which one is practice makes perfect for where dish arrangement de? Go to Paris and see magical cuisines; frying pans catching fire ontop recipe, people gathering herbs, weeds and what not, together, ontop dishes that supposedly have standard recipes. All in some race to become the next best chef.

Nahhhh.

You dice onions into your egusi, add lil water and mix well. Then drop the egusi in molds into the stock on the fire. Then add palm oil. Don't stir yet. After like 3mins... You can stir just to make sure it's not sticking to the pot. Now add your leave. Don't stir till 3mins.

Bros you try but you just murdered our dear egusi soup.
Egusi is one of the easiest soup to prepare. With simple ingredients.

Recipes
Red oil
Egusi granded
Stock fish(very important for test.)
Cray fish (very important)
Stock (water from meat, goat or beef)
Ugu or bitter leave (or mix ugu and water leaves)
Maggie and salt
Pound fresh pepper

How to prepare.
Add your stock water, beef or goat meat.
When boiling, mix your egusi with small cold water like how women mix grand beans for akara.
Add the mix egusi in the boiling stock water like akara being put inside oil.
Allow the egusi to dissolve by itself, do not cover the pot. Add red oil while the egusi is melting.
After like 10 minutes, add pepper, small Maggi and salt (remember some are already in the stock from meat). Allow it to boil for another 10 minutes then add vegetables and close, turn off gas. Open after like 3 minutes and enjoy.
