This is such a great question, and it's so difficult to get a straight answer out of someone.
Traditionally, chemical engineers do process engineering, which would be in a plant (factory). However, chemE's are also highly qualified to do a variety of jobs, which is why it's so difficult to answer the question, "What do chemEs do?"
Like you, I only want to work in an office. Fortunately, a degree in chemE opens a LOT of doors, both inside and outside of engineering, which is one reason why I continued with the degree, even after I realized I wasn't interested in process engineering. Now I'm looking to break in to Research & Development and/or Application Development, which are both desk jobs.
A chemE degree will also enable you to advance to upper management positions within a company. Many senior-level managers have degrees in engineering. Certain companies, such as Kimberly-Clark, prefer chemical engineers over any other type of engineering. ChemE is definitely one of the most respected engineering fields. If you couple a chemE degree with a minor in business or even an MBA, you're looking at a great salary and a nice, comfy, indoor job. (I really regret not grabbing a business minor while I was still in college; it's very easy to do, and it boosts your salary and opportunities tremendously.)
However, keep in mind that a chemE degree is incredibly difficult. If you are not sincerely interested in at least some of the aspects of the degree, you might be very unhappy for a few years. However, if you're the type of person who is willing to trudge through some tough stuff as long as you get a huge pay off in the end, then you can do it.
