I'll have you know that abokis are actually the dirtiest in Nigeria. They don't get much recognition because people have already accepted it as part of their way of life

They have to be enlightened on safe and hygienic practices as the final consumers are 80% aboki. Most deadly germs have mutated with evolution and are more resistant now. So even if they are poor to afford such devices, they should be made aware of the impending danger in neglecting cleanliness. For christ sake, almost every sane person loves that kilishi and so they should raise their hygiene standards.

Don't know if this will help.
step 1. Peel, slice and wash your yam
step 2. Cook with a pinch of salt. Note: 5mins should be ok but depend on how soft you want your yam.
step 3. Drain your cooked yam in a colander and keep aside.
step 4. Break your eggs, put in a plate mix with pepper, salt and onions if you wish. Note: maggi optional.
step 5. Pick a slice of yam mix properly with the egg before fry.

Even Kilishi, if you are fortunate to see the preparation process, you'll never eat it again. You'll see flies everywhere, people stepping on the meat when being dried outside.

It was my dad that taught us to make this. It is not just a street food, it has upgraded and can be found in uptown breakfast menus.

If your fortunate meet the elites, you'll fall for them.
It's the poor ones that have issues. I'm also a southerner and previously had a negative impression about northerners till I was opportune to relocate there, mix with the elite class and get to see the beauty in the north.

Lol Doya da Kui is delicious but highly unhygienic when you buy from a road side Aboki who has an Almajiri as apprentice. He consistently licks his hand after serving a customer and used the same hand to serve another. grin
Aboki is more hygienic than Southerners that would used newspaper to clean their ass when they pooped instead of washing with water.
