Okay.
For jollof rice and stews, using a good amount of onions and sweet peppers (tatase) helps a lot. Especially with ginger and chicken or beef stock (if you're not a vegetarian)
It (onion) also goes perfect with fish stew.
If you're the type that hates to see onion in their food, just blend.

For soups, using blended crayfish, dried fish and local spices will give delicious taste to your soups.
There are the local seasoning; ogiri, iru, dawadawa... depending on what part of the country you're from.

Can't believe I'm gonna do this. And ogiri is one local spice I can't remember cooking with but I will eat food made with it. I just miss home

I use lots of herbs too.

I'm guessing the @op maybe a guy else, he should make his own seasonings. If he don't know how,he should buy some spices and herbs and grind together and tadaa! seasonings here we come without MSG.
