Catfish isn't jus about oven drying. Catfish has to be smoked and dried at the same time. It's the smoking that imparts the distinctive flavors and texture. Drying alone will still leave some fishy odor without the smoke flavor. 1 Like |

I called it oven dried fish doesn't mean it went through only the oven process my dear.... As for the distinctive flavour like you talked about, ours have more than just flavour, a trial will convince you... Fish flavour and taste all depends on the catfish, not all catfish have flavour or that fish taste we all need in our food |
