From the way I put my thoughts across, you would know that's not my intention. I am a very detribalized Nigerian and I have a lot of Igbos as friends and it has always been a source of banter between us. Why do Igbos have an aversion for oil? I am asking with a very church mind.

The Igbos add pepper and oil to meals but in moderation. Variety is the spice of life. We can never all be the same.

Ok forget soup. Normal beans to add oil go dey hard una. We cook our beans with lots of oil, you guys don't.

Too much oil is not really healthy.

I like oil. If I am to warm any left over food, I rather use oil and very little water. Lots of Yorubas do this, but you guys don't. Oil dey fear una.

The face of the soup is nice and appealing, good job overall. but the main seasoning in Ofe nsala, (the Anambra way) would have be an Ogiri Igbo(the one wrapped in papers) not Ogiri okpei.

I have always used Okpei for Nsala instead of Ogiri Igbo.

We usually use Ogiri Igbo for Ofe Ora and Ofe Onugbu.

But I will explore Ogiri Igbo in Nsala to know the difference for myself.

One day here on nairaland, we would discuss the Igbos dislike for oil and pepper when cooking. Any soup without oil and pepper is a no for me, no matter how you cook it. I might eat it, but I can't enjoy it.

Try this one and know if you will still maintain your stance.

Foods from the same source both totally different based on ways of preparation.

@the chef, I prefer ogiri to okpei for the soup.

I will try out Ogiri Igbo for Nsala next time. We have always used Okpei but no harm in exploring.

You are a good cook, but you over spice ooo, this is the modern ofe nsala, normally you no go use fresh fish and chicken together traditionally, and that oziza leaf and him brother just takes away that simplicity ofe nsala is known for, Native Chicken, yam, pepper, salt and Maggi is enough recipe for traditional ofe nsala and yes I'm from Aguleri

Memories of my father driving us to come get fresh fishes from Aguleri back in the days especially during iji periods.

I prefer fresh fish for Nsala with native chicken. My sweet mouth no start today ooo

Its Utazi leaves not Uziza. It tastes so nice in Nsala. Mixing the slight bitter taste of Utazi with the sweetness of the yam and pepper is everything.

Soak with hot water (not boiling hot) and salt for 5 minutes and wash off the slimy part.

Just a little Uda less than a stick depending on the length of the Uda. The taste is silent but still there.
