Inasmuch as I support Taiwan, recognising Taiwan without China's support will set a dangerous precedent. It is a big no no for me.

Even if China doesn't invade Taiwan, they'll bite back by recognizing other breakaway states or embolden secessionists and insurgents the US doesn't support. The UN will become more weakened when powerful states are at enmity with each other.

All countries including the US must obey UN rules concerning states. The UN is there not just for human rights but to promote international order. Imagine a world where groups of people just break away and have big countries recognize them against the parent state. Not only will conflicts and proxy wars form, the UN will not be able to achieve peace because those powerful countries will veto it. The world will go into crazy mode and before you know it, someone launches a nuclear weapon.

Nobody controls the UN. There are many political disagreements between the UN and the USA. Many on Palestine, on Iran, on ICC, on Cuba and many more. Russia alone has vetoed all UN Security council proposals about Ukraine.

I doubt If the US needs Taiwan for any strategic purposes. South Korea which already has US presence is much closer to Beijing than Taiwan. An assault on Beijing will be easier conducted from South Korea than Taiwan. Taiwan issue is just an ideological and ego contest between USA ad China.
