Hamstrings are a sensitive muscle, once they start popping with that severity, they can become chronic. Look at Reece James and Michael Owen as examples

Olise is a good talent no doubt about it, his creativity and free kicks would increase more chances for those who need 5 to score one, but are we really going to spend that sum on an injury prone player? Remember one of the factors that affected us last season apart from pochettino tactics were injuries especially in defence. Unless we beat the price down I'll prefer we look for a left winger that is good but would also cost less, let madueke and Hutchinson or Angelo play on the right. But if he comes no wam, he will improve our team.
