I think strawberry and bananas are the perfect fruit pairing and what could be better than combining them in a healthy smoothie

As for the low fat milk it's just a personal preference.
You could use full cream milk (slightly heavier and a lot more fattening I think) , or half & half or 2% milk. Whatever your milk preference is.

My sister in law makes the same but puts protein powder and skim milk powder and water instead of the low fat milk to make it more of a protein smoothie.

That's the beauty of smoothies I think . Once you've decided on your basic flavours ( Strawberry & banana in this case)
You can pretty much play around with the rest to suit your needs and personal taste.

2 medium size fish (tilapia or catfish )

I lemon or lime

50g / 2oz peppersoup seasoning

50g / 2oz chopped chillies

100g / 4oz fresh shrimp

I litre / 2pints water or stock

25g / l oz chopped mint leaves

Clean the fish and slice.
Wash the fish thoroughly with lime or lemon to remove any slime
Season with salt
Pour the stock into a clean pot and add chopped onions chillies and peppersoup seasoning.
Bring to the boil and boil rapidly for 15 minutes to blend together the flavours.
Add the seasoned fish and peeled fresh shrimp and simmer gently for 20minutes.
Check seasoning and serve garnished with chopped mint leaves.

This is the most popular of all the Nigerian pepper soup variants and is known as nwo-nwo. It goes particularly well with beer and palm wine.
Ingredients:

1kg goat meat or mutton (cut with the bone)
1l water or stock
1 onion, chopped
75g Pepper Soup Spices
50g ground ata rodo
50g tatashe
50g ground crayfish
25g chopped wild mint (substitute watermint or garden mint)
25g chopped utazi leaves (substitute dandelion leaves, for their bitterness if u can't get utazi)
salt to taste

Method:

Wash and cut the meat into small pieces.
Add to a pan with some oil and fry until coloured.
Add a little stock and the onions and ground ata rodo & tatashe
Season with salt, bring to a boil and simmer for about 40 minutes, or until the meat is tender.
Add the pepper soup spices and the remaining stock and cook for a further 15 mnutes.
Add the crayfish, chopped mint and utazi (or dandelion) leaves and stir then allow to simmer for 5 minutes.
Serve hot in soup bowls.

1 cup low fat milk
4 Ice cubes or 1/2 cup crushed ice


put all ingredients in a blender, process until thoroughly mixed and drink

Bitter Leaf - Treats Malaria & High Blood Sugar and high cholesterol

Recent studies indicate that extract of bitter leaf helps to regulate blood sugar and choleresterol levels, thus ensuring healthy blood and heart. According to a recent study titled “Effects of Vernonia amygdalina and Chlorpropamide on blood glucose”, administration of the aqueous extract of bitter leaf at a concentration of 500 mg/kg of body weight significantly decreased the level of blood glucose. Its efficacy to lower blood glucose level was comparable with that of chlorpropamide, a standard drug used in the management of diabetes. The study was published in the Medical Journal of Islamic World Academy of Sciences and written by Dr. Abraham A. Osinubi from the Department of Anatomy, College of Medicine, University of Lagos, Idi-Araba, Lagos, Nigeria.


Results from a recent study titled ”Lipid-lowering effects of methanolic extract of Vernonia amygdalina leaves in rats fed on high cholesterol diet”, suggested the cholesterol-lowering effects of bitter leaf, describing it as a new potential natural product for the treatment of hyperlipidemia(high blood cholesterol level). The study was carried out by Oluwatosin A Adaramoye; Olajumoke Akintayo; Jonah Achem and Michael A Fafunso, all of the Department of Biochemistry, Faculty of Basic Medical Sciences, College of Medicine, University of Ibadan, Ibadan, Nigeria. It was published in the 2008 on line edition of the journal, Vascular Health and Risk Management.

I am transfering to the US next semester from Imperial College in Liverpool, UK to The Johns Hopkins University in Maryland.

I would really like to make contact with any fellow NLanders in that area ( Maryland) Baltimore to be exact. I've only ever been to the US on holiday and have no friends or family in the Maryland area.

If anyone is out there and could show me around town I will really appreciate it.

Ingredients:

* 150g/6oz Digestive Biscuits
* 75g/3oz Butter melted
* 225g/8oz Cottage Cheese
* 150ml/ ¼ pint fresh Double Cream
* 50g/2oz Caster Sugar
* 2 cups sliced Strawberries


Instructions:

* Crush biscuits with a roll,in pin.
* Melt butter in a bowl then add the crushed biscuits.
* Use 50 percent of the mix to cover the base of a 18cm/7in flan case and chill
* Rub cottage cheese through a sieve.
* Whip cream until very thick.
* Fold cottage cheese, sugar, and strawberries into the cream.
* Spread mixture on top of the crumbs.
* Top with lattice of the remaining crumbs.
* Chill for 1 hour before serving.

Ingredients

Serves 10

    * 1/2 cup plus 2 tablespoons sugar
    * 1/4 cup fresh lemon juice
    * 1 cup seedless raspberry jam
    * 4 cups raspberries
    * 2 cups heavy cream
    * 2 cups cold custard
    * 1 1/2 pounds favorite pound cake

Directions

   1. In a small saucepan, bring 1/2 cup sugar, 1/4 cup water, and lemon juice to a boil, stirring to dissolve sugar, 1 to 2 minutes. Let cool.
   2. In a small bowl, combine jam with 3 cups raspberries, mashing slightly. In a large bowl, whip cream and 2 tablespoons sugar to stiff peaks.
   3. Slice pound cake 3/4 inch thick; brush both sides of slices with lemon syrup.
   4. Fit 1/3 of slices snugly in the bottom of a 4-quart trifle dish or other glass bowl, trimming edges if necessary. Gently spread top of layer with 1/3 of raspberry mixture, and then 1/3 of whipped cream and a layer of cold custard. Repeat to make two more layers; garnish with remaining cup raspberries. Refrigerate until ready to serve, up to 24 hours.

I was thinking something like this

This superb Yoruba Speciality is made with assorted parts of meat, dried fish, fresh crab claws and fried snails in combinations with green vegetables such as Soko or Tete.
Ingredients
[size=14pt]Ingredients:[/size]

* I kg / 2 lb fresh Soko or tete (washed & blanched)
* 500g / llb assorted parts of meat (washed)
* 225g/ 8oz stock fish (pre-soaked
* 1 medium smoked fish
* 225§/8oz bushmeat (washed)
* 4 snails (washed with lemon juice)
* 22 5g / 8oz ground Crayfish
* 225g / 8oz fresh pepper
* 500g / llb fresh tomatoes
* 1 small tin tomato puree
* 2 medium onions
* 190ml / 6fl 07, palm-oil
* 1 teaspoon iru
* 1pt stock or water
* salt to taste

Directions

1. Place the washed meats in a large pot, add a drop of water or stock.
2. Season with salt and ground pepper and boil for 30 minutes or until tender.
3. Add the smoked fish, stockfish, crab claws and snails and cook for another 10 minutes.
4. Remove from heat and place in a clean bowl.
5. Wipe the pot out and pour in the palm-oil.
6. Place pot on fire to heat up the oil.
7. Ground the tomatoes, onions, and chillies, add to the hot oil and fry for lOminutes, stirring frequently.
8. Add tomato puree and cook for 5 minutes until well blended.
9. Add the cooked meats, Crayfish and some more stock if necessary.
10. Simmer for 10 minutes.
11. Finally, add the blanched tete or Soko, cook for 5 minutes, check seasoning and serve with Iyan.
