First, you need to find out what your target market demands.....I have customers who prefers non-degutted while many others prefers degutted.

Need more info...08153701613.......
All the best
Removing gills and intestines otherwise known as degutted is simply to give more shelf life if well processed. But it has its disadvantage..it makes your fish smaller in size and may reduce value except you understand sales. Also, its more cumbersome and stressful if you must degut in tons.

First, I advice you learn from experience fish processor...dont avoid such....it pays you eventually when compared with your first experience losses.
You are expected to place your fish back downward and ventral upward....it depends on processor.

Thanks a lot for more enlightenment.

Good day all. I need experience people in the house to help me. I want to start drying my cat fish with the smoking kiln i got from Bethsaidal farm. My question is this:
1. Why must you remove the gills and intestine of catfish before drying?
2. If you don't remove them (intestines & gills), will it affect the drying? And which practice is the best for drying them? Removing
3. Which way is the best position for placing the fish in the oven: is it to turn their stomach downside or to turn their back downside (stomach face up)
