Peppered Chicken

Ingredients ( For 20 Chicken drumsticks)
2 1/2 cooking spoon cooking oil
2 red bell peppers
2 big onions
2-3 scotch bonnet
1 tablespoon minced ginger
1 1/2 cups chicken/beef stock
3 cloves garlic
70 grams tomato purée
1/2 teaspoon curry
1/2 teaspoon thyme
Seasoning cubes
Salt to taste


Before you prepare the Peppered Chicken
Cut one of the onions into tiny pieces and cut the other into thin slices.

Remove the seeds from the tatashe or Tribelli peppers, cut them (as well as the scotch bonnet peppers) into small pieces and blend with a hand blender. The blending should be coarse not smooth.

Any blender that allows you to grind the pepper without adding water should do. For a normal blender, add just enough water to help the blades of your blender move.

Clean the chicken. Cut them into desireable sizes if you bought whole chicken. Place in a bowl and add the knorr chicken cubes, garlic powder, mixed herbs and a teeny bit of sunflower oil.

Massage the seasoning and spices into the chicken with your hands, cover and put in the fridge to marinate for at least 1 hour or more.

After marination, You’ll still need to season your chicken again before cooking, makes sure it’s as flavourful as possible. This helps to enhance the flavour.

Directions
1. Transfer the chicken into a big pot, season with onions, curry, thyme, pepper, bullion cubes, salt and then being to boil. (no need to add water, the chicken would bring out its own sauce).

2. When it’s boiled and tender, grill or deep-fry the chicken….When it’s all done, and set aside.

3. Place another big pot on a medium heat, add 2 cooking spoons cooking oil, when it’s hot, add 1/2 chopped onions, sauté till translucent…

4. Now add the garlic, sauté till fragrant, be careful not to burn the garlic…

5. Now add the blended pepper mix, 1/2 teaspoon curry and thyme, 3 bullion cubes and salt, be careful not to over season,

6. Let this fry for 10-15 minutes or until the pepper reduces by almost half.

7. Add the grilled/fried peppered chicken and stir very well with a spatula till the popping red peppers have coated every inch of the chicken, add the sliced onions, add salt at any time if necessary.

8. Your Peppered Chicken Is ready.

9. You can garnish your Peppered Chicken with onion rings/ sliced spring onions

White Soup (Ofe Nsala recipe)

Ingredients:::
• 1 medium sized Cat Fish
• 500g Beef (Red meat)
• 1 medium sized Dry fish 
• 1 small Stock fish
• 1 Red Onion 
• 2 Scotch Bonnets "Atarodo" 
• 1 tbsp. Peppersoup spice or 1 tbsp. Ground Uda seeds, Ehuru seeds & Mkpuruziza seeds
• 3 Stock cubes, Crushed
• Salt (To taste) 
• 2 tbsp. Crayfish, Ground 
• 2 tbsp full Yam , pounded - Thickener 
• 10 Uziza leaves "False cubeb" 
• 3 Utazi leaves - Optional
• 2 Small sized Ogiri Okpei
• Ngoloo or Isam (Periwinkle) (As desired)


Directions :::
Prepare your ingredients
• To prepare the stock fish and dry fish, soak them both in hot water for about 5 mins till they regain moisture and soften. Remove the bones from the dry fish, Rinse the stock fish and dry fish - set aside.

• To prepare the periwinkles, Remove the eyes and gut of the periwinkles, Rinse - set aside.

• To prepare the catfish, soak in Hot water till all the slime removes, rinse severally and set aside.

• Blend the onion and pepper together with a little water or you can do it traditionally by simply pounding the onion and pepper

• Dissolve your Ogiri okpei n a little amount in water & then set aside.

•Chop the utazi and uziza leaves - Set aside

Utazi is optional and should be added sparingly. it's used to give the soup a slightly bitter taste while the Uziza which is Very Hot/ peppery adds an aromatic flavor & taste to the soup. Avoid adding too much since the scotch bonnet (Atarodo) is being used.

To Prepare The Soup
Step 1: Place the Red beef in a medium sized pot and add a little water just enough to go half way through the beef in the pot. Add the pounded or blended onion and pepper, salt and stock cubes. cook for about 15 mins till a little bit tender.

Step 2: Once the meat is tender, Add some more water (The amount of water you add would be the quantity of soup you'd end up with), Pour in the dissolved ogiri and add the Cat fish, washed stock fish and dry fish, Peppersoup spice / ground uda & mkpuru uziza seeds, Cray fish. leave to boil for about 5 mins

Step 3: Once it starts to boil, Add the tablespoons of pounded yam, stir and cover the pot. The yam would dissolve and thicken the soup. Leave to cook for about 10 mins till it starts to boil and you are satisfied with the thickness. You could add more yam if you want it a little bit thicker.

Step 4: Add the Periwinkles, and chopped Uziza and utazi leaves. Reduce the heat and leave to simmer for for 3-5mins

Turn off your burner and serve with Pounded yam or you favorite Swallow

Is better to prepare Abacha your self to avoid food poisoning, This is one of the best delicacies from igbo land.


Abacha

Ingredients:
. 2 cups Palm oil
. 1 Seasoning cube
. 1 teaspoon ground Ehu seeds (Calabash Nutmeg)
. 2 Dry Pepper, ground
. 1 tsp. Ogiri
. 1 tbsp. potash "Akaun"(powdered)
. 1 large sized Pomo / Kanda (cow hide)
. 4 Handfuls Abacha
. 1 wrap/cup Ugba (Ukpaka)
. 4 tbsp. Crayfish "ground" - Optional

To garnish
. Dry fish, Fried fish, or Pomo(As desired)
. 1 large Red Onion
. 4 Garden eggs
. 3 Utazi leaves

Preparation:
Step 1: Dissolve the potash in a small bowl of luke warm water. Stir well and set this aside.

Step 2: Place the dry Abacha in a medium sized bowl. Pour boiled water over the abacha in the bowl. Leave to soak in a bowl of water for about 20 mins.
This helps soften as well as increase it's size. Once it's soft enough, leave to drain in a sieve

Step 3: For this, i'd be using kanda also known as pomo. If you buy from the local market, you need to clean it properly. To clean, get an iron sponge and scrub the inner part thoroughly With a sharp knife, scrape the outer part also then rinse. Cut it up into smaller pieces then place in a pot of water. Add salt to taste then leave to boil for about 10 mins. Drain off the water then set aside.

Step 4: Rinse the Ugba, Wash and chop the utazi leaves, Wash the garden eggs and chop if you like, Slice the onion rings.

Time to make the Abacha
Step 5: In a pot, pour in the palm oil. Add the potash mixture with a sieve making sure you don't pour in the residue along with it. Stir consistently till the palmoil and potash mixture turns into a yellow paste

Step 6: Add the salt to taste, crushed seasoning, Ogiri paste, ugba (ukpaka), dry pepper,pomo, Crayfish,ground ehu , then stir very well till the mixture is well incorporated.

Step 7: Finally, gently add the drained abacha into the mixture and mix thoroughly till it's well incorporated. At this point, the Abacha is ready to be garnished and served BUT.............
If you like your abacha warm as some people do, you can heat it up a little on a burner.

Step 8: Garnish with the sliced Utazi (Its quite bitter so i'd advice you use sparingly), Garden egg, Onion rings and Fish

How to make "Kunun Zaki" drink 
Utensils:::
• Blender 
• Pap Sieve 

Ingredients:::
• 3 cups Millet (de-hulled)
• 1 medium sized Sweet potato, peeled- Optional
• 2 Medium sized Ginger, peeled
• 1 tbsp. Cloves (Konofiri)
• Sugar (To taste if you're not using sweet potato) - Optional
• Water 

Directions:::
Step 1: Soak the seeds in water for 48hours to allow the seeds ferment making sure you change the water every 7 hours. 

Step 2: Wash thoroughly with clean water and place the millet, Ginger, Cloves (Konofiri) & Sweet potato in a blender (You need one with sharp blades) and blend till you have a smooth paste making sure you add water while blending to enable it blend smoothly.

Step 3: Place the blend in a large bowl and pour cold water over the paste (This is to make it easier to sieve) and mix. Gently pour the slurry into the sieving bag and sieve the mixture. Discard the chaff 

Step 4: Leave the sieved out liquid to settle for about 7 hours, by then the clear liquid would be above the sediment. Sieve out the clear liquid leaving the settled mixture which should be thick.

Step 5: Divide the thick paste into two bowls (Let’s say bowl 1 & 2). Pour boiling hot water over the content of bowl 1 and stir (As if you are preparing pap). Add the content of bowl 2 into bowl 1 and stir some more. At this stage you can add as much water as you want depending on how thick or watery you want your kunu. It’s usually thick though.

Step 6: Sweeten with sugar, Refrigerate & Serve Chilled.

Sun burn remover

For sun burn u need to do ur normal cream cream base of 50ml.
add zinc oxide 1teaspoon,
add aloe gel 1 table spoon
add vitamin b3 1tea spoon
mix together and then massage it gently to your face... it also clears sunburn fast, clears pimples away from the face and it lightens up the face too.

Zinc oxide is a sun screen. Its actually one of the best available.
But still, please note that I will always will advice u to only use a cream containing a whitening agent at night only.
It works best at night and also prevents ur skin from sun burn.

Use ur normal creams without whitening agents during the day.
Follow d recipe above
1 teaspoon for 50ml
U can use it for 100ml too

Otherwise go for a vitamin c infusion facials, This will remove the discoloration and photo damage.

Afang Soup

Ingredients:
Water
Goat meat 1 kilo
Stock fish 1 big pack
Onion
Salt
Palm oil
Seasoning cubes
Crayfish 1 cup ( 7cm measuring cup)
Smoked cat fish 3
Okazi (Afang)leaves 4 cups (sliced thinly)
Water leaf 2 large bunches
Periwinkle 2 cups
Snails (optional)
Cow skin (optional)
Dry Shrimps (optional)
Bonga fish (optional)

Directions:
Step 1: To prepare the Afang leaves, you'd have to choose between Grinding or pounding the leaves. If you want to pound, wash and place the leaves in a mortar and pound with a pestle till it breaks up further. You can also grind the leaves at home or with a commercial mill in the market (This is usually done with a little bit of crayfish to make it grind smoothly). - Set this aside.

Step 2: For this meal, you could either use the shelled or un-shelled type. To prepare, wash the shelled periwinkles thoroughly to remove the mud. Chop off the sharp edge of the Isam/ Mfi with a Knife or pincer. Rinse clean and set aside.

Step 3: Wash the Beef, Stockfish, Dryfish, Sharki, Pomo and place in a small pot. Add the seasoning cubes, Salt and pepper. Add a little water, just enough to cover the contents of the pot and cook for about 15 mins till tender. At this point, add more water into the cooked meat. This would serve as a base for the soup.

Kitchen Tip: To reduce stress, you could add the pepper whole so that once the stock is done, they could easily be removed before the real soup preparation. This doesn't prevent it from giving you the needed flavor and basic nutritional benefits.

Step 4: Once the stock starts to boil, Simply add the palmoil and mix. Leave to cook for about 15 mins till the stock in the pot reduces and the soup thickens.

Step 5: At this point, you can now add the Crayfish and Periwinkles (if using shelled but if using in shelled, add periwinkle after adding the waterleaf), Leave for 5 minutes

Step 6: Add the ground Afang. Leave to cook further for 5 mins.

Step 7: Add the chopped water-leaves. Leave to cook further for 5 mins. Water leaves tends to bring out more water once it gets into the soup so ensure the liquid in the pot is very little before adding water leaves.

Turn off the burner and Serve with your favorite swallow; Garri/Eba, Fufu, wheatmeal, pounded yam, Semolina e.t.c.

CHAPMAN RECIPE FOR 1 PERSON

Get a large tumbler/glass mug (necessary if you want to make your Chapman-experience last a bit)
Fill the glass halfway with ice cubes
Pour a capful of Grenadine or any blackcurrant cordial into the glass (for that red glow)
Pour in 2shots of Bitters – Any bitters you can find but you can also use Campari (In Lagos, Angostura Bitters is available at Goodies for N3,200).
Pour in equal amounts of…believe it or not…Fanta and Sprite then mix it up
Throw in a slice of lemon, garnish with a cucumber slice and dip-in a bendy straw
Sip slowly and try not to hum too much as your taste-buds go into a frenzy.                     
                                   
CHAPMAN RECIPE FOR 100 people
You’d need the following (if you are serving in small plastic cups):
– 1.5 litres of Ribena/Blacurrant cordial/Grenadine (about 1 big table spoon poured at the base of each cup)
– 50 cans of Sprite (half of each can poured into a cup)
– 50 cans of Fanta (half of each can poured into a cup)
– 10 medium lemons (each sliced in 10, making 100 slices)
– 10 medium cucumbers (each sliced into 20 and served two pieces per cup)
– 4 bottles of Alomo bitters or 3 bottles of Angosturra bitters (a capful poured into each cup)
– Probably 500 ice cubes equivalent (cheaper if you have ice trays at home. 5 cubes per cup)
– 100 bendy straws.
– Mixers (long plastic stirrers) are optional as you can use the straws to mix the drinks

N.B – If you use large mugs instead of plastic cups then use 100 cans of Sprite and 100 cans of Fanta (1 can of Sprite and Fanta per mug). Everything else remains the same.

Classic Party Fruit Punch

Ingredients
1 (46 oz) can of naturally sweet pineapple juice
1 (2 litter) bottle of Ginger Ale
1 gallon of Hawaiian Punch (Fruit Juicy Red flavor)
1-2 cups of sugar (I always use 2 cups)

Instructions
1. In a punch bowl add Hawaiian punch (I always make the punch up in my super large mixing bowl and when I'm ready to serve it I just pour it into the punch bowl. Sometimes I even stick it in the freezer so that it's kinda slushy when I serve it.) Next, add in the pineapple juice

2. Add in the ginger ale & stir gently.

3. Now add in the sugar and stir until dissolved.

4. Serve ice cold. Float an ice ring in the center to keep the punch cold.
