Your thermostat is purely mechanical and has no wires attached to it.
I guess you're talking about reverting the fan to come on and off with the rising temperature and when thermostat opens.
Download the wiring diagram for your car to help with it, or better still, get an electrician to help reverse back to factory setup.

Exactly, I want the wiring diagram for the radiator fan to ensure the electrician does the work as factory did. I don't always assume mechanic is perfect, especially in this kind of work which no room for mistake is tolerated so that my top doesn't burn in case work is not properly done

Could someone help me with the correct wiring diagram to ensure the thermostat is properly wired after inserting it into the engine. Run from that olodo you call mechanic.
Note that reinstalling the thermostat alone will not stop the "always on fan". You have to also locate the wiring abuse and revert it. Check the ECT sensor at the base of the radiator. That is most likely the location of the abuse.

Check if all the coils are OK too. To save time, run a scan to be sure of which cylinder is misfiring.

I used lexus denso iridium plugs in my 07 accord, the engine is still not running fine. Could the problem be the plugs or any matching plugs can work in any car?

Installing a Thermostat wont cause over heating.
I use the same 07 Accord and I can tell you confidently that it wont cause any issue as long as the Thermostat is good.
Check your radiator to know if it has the sensor at the lower part as I heard it's required for the fan to fulfill *YOUR* purpose.
