Your Family Size: you need to consider how many of you are in the family, including relatives & domestic staff.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Number of times you eat in a day: you need to consider the number of meals you eat on a regular day. Most families eat only twice a day. Some only once. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

I was expecting someone to ask this. Okay so if you want to fry, you might have to peel them raw (use a potato peeler, makes it easier) and they are cutters you can use to cut them easily after peeling.
Personally, I don't like stress, so I boil the potatoes halfway, peel them then cut and fry. This is because usually I would always add water to my potatoes while frying them so I just parboil first, no need for me to add water again.
Note that this my style works only for sweet potatoes. For Irish potatoes for your French fries, peel and cut the potatoes raw. I hope this helped.

Yesterday, I mentioned how potatoes are always very difficult to peel and cut. Especially that sweet potatoes�

Well, it doesn't have to be so bad� cos today's #tricktuesday I am going to be giving us a simple but very useful trick on how to peel and cut your potatoes easily, whether Irish potatoes or Sweet potatoes.
I have been using this trick for years and it is just a life saver� because before I got to know this trick, I hated cutting potatoes so badly that I would rather not eat than go through that struggle.
Now these 5 simple steps are:

1. Wash your potatoes very well to get rid of the dirt and sand

2. Use your knife to cut a thin line horizontally across the potatoes
3. Boil them. When they are ready, drain into a seive.
4. Get a bowl of ice water, and pour the cooked potatoes into it. Leave it for about 3-5mins.

5. Drain them out and the skin would pull out easily from the center where you have slitted it before cooking.
Then you can easily cut into your desired shape without stress.

Somebody epp me, pls my ear she yaf blind�� So I stepped out to see a friend at the bus stop to my house and we got talking about a woman who sells corn. I wanted to buy corn but she was just cooking it.

I was like who cooks corn in the evening � me that I was already vexing because I really like corn gaann.

My friend na told me to be patient that it would be ready soon, and I was like how does she know that? She said don't I know that they usually use nails to boil the corn so it gets soft on time���� I couldn't help but express my shock.

You say what? �

She said yeah they use put nails or stainless spoons inside the corn to make them soft on time. I couldn't help myself.

I just carried my kaya, bought raw corn and went to my house jejely.
Going forward, I will boil my corn in my house with clean water and no nails, na my pressure pot go suffer am.

Roadside foods have never been healthy, as much as you can minimize what you by outside, cook your own meal.

The truth is that people attach too importance to cooking, no big deal in cooking. You may not cook everyday but can play your cooking in two weeks interval. Within this period, probably weekend, cook different pots of soup or stew and then fridge them.
If you follow this format,then, you won't need your maid to do your cooking. She may warn or microwave if the need arises.


Very true, I think its just personal preference, there is really no big deal.

So I was discussing with a lady this morning and this was one of the things we talked about. We didn't really agree to the same notions but I know everything in life is just perspective, no one is wrong.

I am of the school of thought that my maid's or house help's job isn't to cook my meals. He/she would do the cleaning and all, but one of the things that is not part of their job descriptions is to cook my meals.

I know what works for me wouldn't work for others. I love to cook and no matter how busy I get i have put a system in place to make sure I do my family cooking.

What is your take on this? Would your maid cook your meals or would you rather handle it yourself? And why?

Who doesn't get freaked out when frying?
Fish most especially is no respecter of anyone. You better wear helmet before you start�

I know some people who don't fry the head of the fish cos that is the height of it all.

But luckily, there is a way out.
You remember those times when charcoal was used in cooking more than gas or kerosene, and as a caterer that period, we consumed a lot of charcoal.

Sometimes, the charcoal we buy just keeps splashing tatatatatatata so much that you can't stay close. We just simply add salt to the fire and boom, the sea is calm no more tatatatatata

Same trick applies to your frying. Before you start frying, add salt into the pot, and you wont have to be jumping about like Michael Jackson�

Easy peasy my darling sisters, don't stress.

Anyway that makes the cooking wahala easy for you, is what me i will be bringing to you.

As a confirm foodie, there are some food ingredients that I think are really tasty, but my friends and family will be looking at me as if I killed somebody�

Some ridiculously amazing food ingredients I love to eat are Onions, Okporoko, Crayfish, Locust Beans(especially when it is dried) and Maggi��� My mum used to beat me every time she catches me eating these especially the locust beans and maggi. I don't know why�

You will still use it to cook the soup, how about i eat my share of it raw and you don't add it to my soup�� �

Them no born me well to ask her tho, i only used to ask in my mind, before she use turning stick to reset my teeth��� I usually buy crayfish and okporoko not to cook but to eat.

What are those food ingredients you lose your home training for?

My pple make una help me judge this mata abeg?�

One of my neighbors won't stop this her habit of telling me she can't go and buy meat from baba Ruka, simply because he is a Muslim (maybe an Alfa cos he lives in a house that has a mosque #justsaying )

But the Koko of the matter is this man sells cheap goat meat, and my darling neighbor thinks me a sinner because I patronize him.
In her words " how would u be buying meat from that Alfa, do u know the kind of things he might have done before killing the meat?" My reply was simple, "have u ever seen a Christian selling meat before?"���

So my dear lovers, if u know anybody that knows anybody who knows someone that is a Christian and sells meat, pls tag them, I need to find a meat seller for my friend����

I think she is just being silly and over religious. What do you think?

But really have you ever seen a Christian who is a butcher, especially if you live in Lagos?

If you were asked what part of your home harbours more germs, I'm pretty sure you wouldn't think of your kitchen.

Well, research has it that your kitchen sink and cutting board harbours more germs than your toilet seat cover.

Funny right? Yeah I know.
It retains so much germs, which is why you have to pay close attention to it.

These are few things you should know about using your cutting board:

1. What kind of cutting board do you use?
Wood? Glass? Silicone? Plastic? Wooden boards retain more moisture hence more germs. So you might want to opt for either of the other three. If you cant be careful with glass, silicone and plastic are better options

2. Never use the same board for all your cuttings. Have a separate board for raw foods, cooked foods and veggies.

3. Always wash your boards with warm water after use. Don't just rinse & dump them. Leave them to dry after washing before putting them back in position

4. If your board has a handle, hang it instead of putting it in a damp drawer with other utensils.
You can create a hole, attach a rope to hang it somewhere in your kitchen.

Kitchen hygiene is of extreme importance to your health, and your cutting boards is sure one of the most important parts of it.

Remember, Health is Wealth.
